I would pick the chocolate cake. Carrot cake is better for holiday dinners, and cheesecake is more of a potluck-type food. Just make it moist and rich, and he won't be able to resist.

Chocolate. It's rich, won't compete with the tomato sauce, and it's a more seductive flavor.
Carrot cake is a bit unique in it's flavor, and it won't complement the taste of the pasta. Cheesecake, while my favorite, is a bit too heavy after that kind of dinner. You don't want a sloth on the couch after you've eaten.

A turtle cheese cake ..... with hot fudge or warm honey drizzled on top .... a cherry garnish won't hurt either !
