I like to chew gum when I work out not only to keep my mouth moist but chewing seems to keep my mind off of watching the clock. The workout seems a lot quicker. But please do remember to drink plenty of water after running.

Not only should you keep yourself hydrated BEFORE running, keep yourself hydrated throughout the day. Trust me, have at least 64 oz of water a day and you will feel fine when you work out. I know from experience. Ever since I started drinking a lot more water, I find that I can do cardio and not have a dry mouth.

You can also run with slightly pursed lips. I used to experience the same thing, and in my cases my mouth was too open, exposing too much of my throat and drying everything out as I gasped for air.
Before I run, I gargle and swish some water to moisten my throat/mouth, and while running I purse my lips while relaxing my jaw. The resulting cavity keeps the air from rushing too hard, and relaxes/slows my breathing as well.

As a cross country runner, I know that your mouth only gets dry when the air is dry. You can't really do much about it. Try running while it's more humid.

make sure you are hydrated BEFORE running, i drink from my water bottle before i begin, even if i dont feel thirsty
are you running with your mouth slightly open? this may affect it
also running in cold/dry weather will cause this...

Drink water while you're running. You're supposed to while exercising to prevent dehydration -which is what you're experiencing.
