If you believe God created the universe with all it's complexities, and ever changing planets, stars, and solar system, why can't that same God create a man, and it's ever changing and evolving mind, and abilities?

IF? It sounds like you're not even sure that evolution is a proven fact. One reason, because it's NOT!!
I believe God created the universe (and man) because of their perfect design. Everything works perfectly together and could not have possibly just came about in some big bang. And even IF people had evolved from fish (or apes), who made the fish in the first place, and why aren't we still evolving? There are so many loopholes in the theory of evolution that it's not even funny.
Besides the basic scientific reasons for believing that God created man, another good reason is that He told us so in the Bible through divine inspiration given to Moses. In Genesis 1:1 it says "God created the Heavens and The Earth", and in Genesis 1:26 -27 says "And God said, Let us make man in our image, after our likeness: and let them have dominion over the fish of the sea, and over the fowl of the air, and over the cattle, and over all the earth, and over every creeping thing that creepeth upon the earth. So God created man in his own image, in the image of God created he him; male and female created he them"

I have to agree with the previous answer, evolution is not a proven fact. Study the anatomy of man down to the atoms, watch an ultrasound, and tell me that was all mere chance. If you can believe that He created the entire universe, but can't believe He created man, I don't quite see where the doubt is rooting from.

Do people think Man created god? Yes, we do! Evolution is only a small part of humanity's life here on Earth. The larger part is the need for many people to believe in some higher power. The creation of the Universe does not entail that "he" the one higher power, created anything. Faith alone has sustained millions for centuries, but Science has only proven many of these things ( to be true or false) in the last CENTURY. The answer to your question is this -- It will take more than a century for change to occur...but come on!!

Half the people in China who are non-christians do not believe that a God created man. Those who still hold on to ancient beliefs in China believe that the "god" that created man was in fact a Goddess called Nuwa ( whom some say had a torso of a serpent - serpent...garden of eden..sound familiar?)
the "god" who created the earth was a titan-like being called Pangu.
All in all, if you count the ratio of the ones who believe that God created man and those who don't are not that far apart.... its basically a 50-50 thing... and also Science like the Divine is Absolute in their essence of truth but Scientists and "Divine-ists" are limited in their understanding and view of that truth.

Why do people think God created man?
Because no human wants to take full responsibility for the heinous things humans are capable of doing.
It's GOT to be someone or something else that created this mess and that makes "them" responsible. Not us.
We are stupid children.
and the ape evolution response, uh honey, why do some humans have brown hair and some blonde? Why do some humans have the ability to create amazing art or music and others can't see, speak, hear, walk?
Why are some cats huge like the lion and some tiny like housecats?
I am SO glad that you aren't teaching my children science. They would still be thinking like four year olds.

God didn't just make MAN. He made EVERYTHING and He didn't just make everything......He made everything work right!!
There is some proof that evolution did take place but the NOW humans did NOT come from monkeys, fish, worms or Geico's "Ape Men".
IF we came from monkeys, why are there still monkeys running around...........??

People believe what they want to believe. There is tremendous overwhelming evidence that supports the 'theory' of evolution. There is not a shard of scientific evidence that supports Creationism. Nevertheless- people believe... they want to believe. It's so much happier that way.
