I've heard a lot of reasons. (I hate hershey's too.) Most of the cocoa butter in hershey's chocolate is replaced by Polyglycerol Polyricinoleate (PGPR), an artificial emulsifier. This sours the final product, and makes it far less healthy. Also, Hershey's chocolate is not processed as long as gourmet chocolates and this leaves it "gritty." I like Godiva. And Sees. And Ghirardelli. Dove chocolate is a good cheap alternative.

I suspect it's because of the percentage of cacao that they are putting in. Higher end chocolates, such as Scharffen Berger (which Hershey bought out last year, sadly) have percentages on their product, it goes up to 71%! Hershey doesn't do this, probably because their percentage is like .001%. I think they are disguising sugar+wax+brown coloring as "chocolate". I agree with you, I won't touch the stuff.
