Makes 48 Cookies
Simple and delicious, these cookies are rolled in a mixture of cinnamon and sugar. Since I was a child, the name has always been a mystery. Be careful not to overbake them; they should be slightly chewy.
Ingredients
1/2 pound butter, softened
1-1/2 cups sugar
2 eggs
2-1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
Topping:
4 tablespoons sugar
2 teaspoons cinnamon
Directions
Preheat oven to 350 degrees F.
In an electric mixer, cream butter and sugar until light. Add eggs. Mix until well blended.
On low speed, add flour, baking soda, and salt. Mix just until blended.
In a small bowl, combine 4 tablespoons sugar and cinnamon.
Roll dough into 1-inch balls. Roll balls in cinnamon and sugar mixture. Place onto a parchment-lined cookie sheet, spacing each cookie 2 inches apart.
Bake 10 to 12 minutes or until firm.
Remove cookie sheet from oven. Cool cookies completely on parchment. Store cookies in an airtight container.

In a shallow bowl mix the sugar and the cinnamon. Roll the dough into evenly sized balls and roll in the sugar. Place them 2 inches apart on an ungreased cookie sheet.
Bake for 12-15 minutes. The cookies should be brown and soft, but not burned. Remove from cookie sheet immediately and place on wire rack to cool.

2 1/2 cups Flour
1 cup Finely Chopped Pecans

1 3/4 cup Sugar, Divided
2 Eggs
1 teaspoon Vanilla
1 teaspoon Ground Cinnamon

1 teaspoon baking soda
1/4 teaspoon salt
1/4 cup white sugar
2 teaspoons ground cinnamon (mix these)
Directions:
In a large bowl, cream together the butter, 1 1/2 cups of white sugar, and the cream cheese. Add eggs and egg whites; continue to cream until smooth. Sift together the flour, cream of tartar, baking soda, and salt; stir into the creamed mixture. Cover and refrigerate dough for at least 1 hour. Preheat oven to 400 degrees F (200 degrees C). In a small dish, mix together the remaining white sugar and the cinnamon. Roll the dough into walnut sized balls and roll the balls in the cinnamon-sugar mixture. Place the balls onto the cookie sheet at least 2 inches apart, flatten slightly, and bake for 8 to 10 minutes in the preheated oven. Remove from cookie sheets to cool on wire racks.

EASY TO MAKE SNICKERDOODLES
1/2 cup shortening
1/2 cup or 2 tablespoons sugar
1 egg
1/2 teaspoon vanilla
1 cup or 4 tablespoons flour
1/4 teaspoon salt
1 teaspoon baking power
4 tablespoons of cinnamon
4 tablespoons of sugar
1. Cream the shortening, sugar and egg with electric mixer until smooth.
2. Sift flour, onto a wax paper, about 1 1/2 cup.
3. Measure flour, salt, and baking powder into sifter and sift over a small bowl.
4. Add the sifted ingrediennts into the sugar and shortening and egg mixture and mix well with a wooden spoon.
5. Add vanilla and stir again.
6. Dough should be soft and easy to handle. Add a little more flour (about a tabelspoon or so) if dough sticks to your hands.
7. Preheat oven to 400F. Set out cookies sheets lined with foil 8 combine suger and cinnamon into a small bowl and set out side
9. Roll pieces of dough into the size of a small jawbreaker. Roll the bal inot the sugar cinnamon mixture. Place on a foil line cookie sheet, three across and five down. Place the rack in the middle of the oven.
10. Bake for 8-10 minutes until lightly brown. Cookies will puff up and then will flatten down and have a crispy top.
11. Let the cookies cool on the rack.

INGREDIENTS:
1-1/2 cups sugar
1/2 cup butter, softened
1/2 cup solid vegetable shortening
2 eggs
2-3/4 cups flour
2 tsp. cream of tartar
1 tsp. baking soda
1/4 tsp. salt
3 Tbsp. sugar
1 Tbsp. cinnamon (I use more, because I'm a cinnamon freak)
PREPARATION:
Preheat oven to 400 degrees F. In large bowl, combine 1-1/2 cups sugar, butter, shortening and eggs and mix well until blended. Then add flour, cream of tartar, baking soda and salt and blend well.
Combine 3 Tbsp. sugar and cinnamon in small saucer. Form dough into 1" balls and roll in cinnamon sugar. Place on ungreased cookie sheet about 2" apart. Bake at 400 degrees for 8-10 minutes until light golden brown. Remove from cookie sheets to wire rack immediately to cool. 72 cookies
