the pig is one of the dirtiest animals. did you know that no matter how the pig is raised, that pig meat is full of tiny little microscopic worms. thats right worms. that is what you are eating when you eat pork and you dont want to know what you are eating when you eat catfish.

It doesn't have to move around much, so the muscle tissue is tender, and it is well fed, so the fat keeps the meaty tissue tender when it cooks. Pork roast is a great example, and it is especially good with soy sauce, a little garlic, salt, and pepper in the pressure cooker for 45 minutes. YUM! The meat falls of of the bone, it is so tender.
