you might be allergic to those cheeses because they have something in them that the body can't take. try soy or rice cheese. it is a good substitute because it is good for you and you are unlikely to be allergic to it.

If you are using a basic white sauce that calls for Parmesan cheese and you don't have it you can do this: Mix flour and butter together in a pan until it's a paste then add milk and chicken broth and stir until this mixture thickens. Add pinch of salt and chopped parsley, and a dash of nutmeg. Sauteed mushrooms can be added too. Make some buttered toasted breadcrumbs and sprinkle on top it will add another nice touch. Parmesan cheese has a taste of it's own. Cheddar would be too strong and Mozzarella is too bland and stringy...the chicken broth mixed with the white sauce has a very pleasant taste. Last idea is to shred some Monterrey Jack Cheese into the white sauce as stated above it would help with the cheesy taste without over powering with a harsh flavor. but use the plain white one not the one with peppers. Try Asigo cheese i prefer it to parm. in the first place, I'm notsure if you sre allergic to cow's milk though, so be carefull. Here's some info and background on it that might help.

Try a soy substiture for the cheese. I hate soy but the cheese substitutes are pretty good. And it's good for you. My Female Dr started me using them for female issues.

white mellow miso has striking similarities to the flavor profile of aged hard cheeses.
If it isn't a dairy issue, you may try cotija cheese -- this is a milder Mexican semi hard cheese that can be crumbled-- that you might be able to find at your local mercato.

you could substitute either asiago or romano for the parm. and cottage cheese for the ricotta. My mom does that with lasagna all the time.
