Either raw or cooked should be fine, but in small amounts. I wouldn't give him all of the leftover fat from the steaks of everyone in the family, for example. For starters, he probably doesn't need it (except as previous poster said, where much of the fat ought to be left intact in a raw diet). And second, too much fat will create loose stools and possibly bad tummy.

Some small dogs, particularly toy breeds, do seem to be more affected by excessive fat than larger dogs do. With that consideration, just keep the amount proportional to the size of the dog so that it's a bit of a snack and not the size of their whole dinner.

To much fat can cause acute pancreatitis.

However feeding raw meat, as part of a balanced raw diet. Here is some information on raw diets.

There is another diet option other than dog food. Some people choose to feed a raw diet. This involves feeding the dog raw meaty bones and organ meat. However it is not as simple as throwing a couple chicken bones in a bowl everyday. If you wish to feed this type of diet, do lots and lots of research first. Switching to this diet without knowing what your doing can lead to nutritional problems for your dog. I'll give you some links as a starting point in research if you are interested in this type of diet.

I don't believe wolves eat with silverware and remove the fatty parts of the meat. They eat the whole animal. As for cooked or raw, if you can eat it raw, your dog certainly can. Just adjust your dogs feeding accordingly, and don't feed it huge amounts of fat alone daily.

it is VERY bad for your dog to eat fat, just like it's bad for humans to eat fat. it can cause a number of health problems, not to mention dangerous weight gain. and not only that, it can cause soft stools, and who wants to clean up diarrhea?
