Queso Fresco - "Fresh Cheese", is exactly that. The fat content will depend upon the milk used, the amount of butterfat that is coagulated into the curd that is pressed into the lump you take home. All cheeses are required to carry nutrition information, and that is probably the best place to go for info.
If you are truly worried about fat, an excellent "Queso Fresco" can be made from lowfat PLAIN (NOT Vanilla!) yogurt. Simply strain through a fine tea-towel, or several layers of cheesecloth, pressing out as much of the water (whey) as you need to to get the consistency you want.
Excellent when perked up with some herbs, or lemon zest, put into omelettes, made into spreads....
