Chicken Ritz Casserole
Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.

POT LUCK BAKED BEANS
2 (1 lb. 13 oz.) cans pork and beans
1 lb. bacon, cut in pieces
2 med. onions, chopped
2 lg. green bell peppers, cut in chunks
2 tsp. Worcestershire sauce
1 c. ketchup
1 c. brown sugar
Combine all ingredients and put into a large casserole dish or can use 2 smaller ones. Bake, covered, in slow oven (325 degrees) for 3 hours. Stir occasionally. Uncover for the last 30 minutes of cooking time. You can use less bacon but the full pound really makes these beans special. Makes about 20 servings. A really good and easily made dish for pot luck for a large crowd.

This iS JOHN'S CORN CASSEROLE:
8 1/2 counces corn bread mix
16 1/2 ounces whole kernel corn, drained
16 1/2 ounces cream corn
8 ounces sour cream
2 eggs, beaten
Preheat oven to 350 f. Grease a 13x9 baking dish. Combine the mix and butter; mix well. Add the corns, the sour cream and the eggs; mi well nd pour into the prepared baking dish. Bake 30 minutes. Serves 8.
Or you can buy one of thoes complete dinners (in a box in the same asile as Hamburger Helper)
Tip USe a little more of both corns in this casseole, and it'll be like having yumy cream corn! I'd be willing to teach you a to cook.

Crock pot macaroni and cheese
16 oz. box of macaroni (for 5 qt. pot)
3 large cans of evaporated milk
3 cups shredded cheese, chedder or whatever kind you like best
3 eggs
1 stick melted margerine
salt and pepper to taste
1 tablespoon sugar
Mix all together and put in crock pot. Cook on low 3 hours. Add a little extra cheese on top if you love it real cheesy.
Casserole in the Crockpot
1 package (16 oz) frozen broccoli cuts, thawed and drained
3 cp cubed fully cooked ham
1 can condensed cream of mushroom soup, undiluted
1 jar (8 oz) process cheese sauce
1 cp milk
1 cp uncooked instant rice
1 celery rib, chopped
1 small onion, chopped
In a slow cooker, combine broccoli and ham. Combine the soup, cheese sauce, milk, rice, celery and onion; stir into the broccoli mixture. Cover and cook on low 4-5 hours or until rice is tender. 4 servings.

Easy and good.
POT LUCK DISH
1 c. shell macaroni, uncooked
1 can cream of celery soup
1 can cream of chicken soup
1/4 c. onion, chopped
2 c. cooked chicken or turkey, diced
1/4 c. diced almonds
1 lg. can mushrooms, juice too
Saute the onion and green pepper in butter. Mix all together and let stand overnight. Bake 30 minutes at 350 degrees. Take off lid and top with Chinese noodles and bake 15 minutes more.

Try a bread bowl with spinach dip.
Get a loaf of pumpernickel bread and cut it into bite sized chunks.
For the dip:
1 pkg frozen chopped spinach, thawed and drained
1 large container (500ml) of sour cream
Miracle whip dressing equal amount to the sour cream; use the sour cream container
1 pkg Knorr dry vegetable soup mix
1 tbsp Worcestershire sauce
a few drops of pepper sauce or Tabasco.
Mix the ingredients and let them sit together over night.
Put the dip in a bowl and put the bread chunks around it on a large platter ... it's always a hit.
Or
Mix a package of cream cheese with 3 tbsp of sour cream and a package of taco seasonings
Layer on a plate
Cover with layers salsa, chopped lettuce and grated cheese.
Serve with nacho chips.
Both recipes are easy and are well liked.

This always seems to be a big hit anywhere I take it. It is called Pizza Dip.
Combine 1 package of cream cheese with 2 tablespoons of sour cream. Spread in the bottom of a 10x13 pan (or equivalent rectangular pan). Next pour on 1 jar of Pizza Sauce. If you like pepperoni, tear it into pieces and spread over sauce (as much or as little pepperoni as you like). Next, cover with 8-12 ounces of shredded Mozzarella cheese. Top with any or all of the following:
Chopped bell peppers (green/yellow/red/orange)
Sliced fresh or canned mushrooms
Sliced black olives
Chopped onions
I try to "decorate" it for the holidays. Christmas...using red & green peppers as part of the topping. Halloween...using orange peppers and sliced black olives, etc.
&/or any other favorite toppings. Very simple and you came make the dish exactly the way you like. We usually use tortilla chips for dipping, but again it's your choice. Probably want to stick with something fairly strong because of the cream cheese, though (crackers, Doritos, Fritos, etc.) Good luck!

Quesadilla
Flour tortilla
green onion
cheese (whatever you prefer)
grease a skillet (or use PAM) heat the flour tortilla, put the cheese and green onion on top, on one side of the flour tortilla and then fold the other side of the tortilla on top.
Cook until cheese is melted just about 1-2 minutes, on medium heat.

If you don't cook, cheese and crackers are always good. Sometimes I take a big relish tray with pickles, olives, cheese, veggies, etc. - no cooking involved, and everyone likes it. You could talk to the hostess and see if she needs paper products, chips, etc as well. If she entertains alot she may appreciate the help with the little things. Good Luck!
