Mayo is easy
Ketchup is difficult
My dad used to make ketchup from scratch. It cooked forever and never tasted right (maybe he didn't have the right recipe - this was back in the days before yahoo! answers.)
Mayo is really easy if you have a food processor, and you can do many things to give it variety. The basic recipe is to put egg yolks (usually 2) in the food processor, add a bit of salt and some sort of acid (vinegar or lemon juice for example - about 1 tsp). If you want any herbs in the mayo, add them now, too. Run the food processor for about 15 seconds. Add oil (I prefer to blend olive oil and canola oil - you'll figure out if you like the olive oil taste or not) through the feed tube. Most food processors actually have a tiny hole that lets oil go through in a very thin stream. Use about 1 cup of oil. Leave the food processor on while the oil gets added.

Don't have a recipe for catsup: probably mix some vinegar and sugar into tomato sauce, thicken with tomato paste, if needed.
"Mayonnaise" - 2 1/2 cups
3 egg yolks
1/4 cup vinegar or lemon juice
1 tsp. salt
1/4 tsp. dry mustard
2 cups salad oil
1) In small bowl with mixer at medium speed, beat egg yolks, vinegar, salt and mustard 2 minutes.
2) Continue beating; gradually adding 1/2 cup oil, about 1/2 tsp. at a time, until thick and smooth.
3) Continue beating; add remaining 1 1/2 cups oil, 1 tbsp. at a time, until mixture is thick and creamy. Cover; refrigerate until serving time. Serve on tossed greens, in sandwiches or recipes.
BLENDER MAYONNAISE: In covered blender container at low speed, blend first 4 ingredients 1 to 2 seconds until thoroughly mixed. Remove center of cover (or cover), and at low speed, very slowly pour oil in steady stream into blender; continue blending until well mixed.

Real mayo has raw eggs in it, and while i like mayo, I wouldn't touch that with a 10' pole.
