Here is what I have eaten today:

Any suggestions on what i should eat to get up to 1200 calories? I am always a really healthy eater, I am not trying to lose weight, but I am never hungry. any help is appreciated!!! (btb I am female 20 5"2 and 100 lbs)

It would be helpful to know what food you ate. I have no sense of whether you ate fruit, veggies, cheese, etc. I'd suggest eating something that balances what you had today. Also, you are not eating enough. If you are not dieting, you should NOT be eating only1200 calories.

looks pretty good I would drop the carbs and up the fat intake just a hair. other then that I think you should be ok plus that should get you to hit your 1200 cals. Dont put all your eggs in the 1200 cal baskets just get close. You'll kill youself trying to hit the nail on the head all the time and most people that do that end up getting tired of the work after a while. keep up the good work looks good

You could have a meal replacement shake, like a slim-fast or a protein shake. That would give you about 250 calories and it's a drink. It's easier to ingest. It would take much to add 200 calories to your diet. An extra peanut butter sandwich would do it.

eat anything you want, but please just eat! you should be eating 2000 calories a day.
