Yes, if you make more then a cups worth break it down to that size so you can use it later.
Frozen starter will take at least 3 hours at room temperature to thaw before using.

No you cant freeze Amish bread started , it will kill the yeast in in . If you aren't going to use it share with a friend or ask someone to feed it for you but don't freeze it

Starters are usually live...containing yeast and soured cultures. Freezing might kill it... I'm not 100% sure I'd do it.
