Probably anything you make, will impress them. But here's a bread recipe, and I have a very simple recipe for a corn casserole. It's delicious! When hot, on the plate, it's like eating cream style corn, which is something I really like! Let me know, if you want the recipe.

Hobo Bread

This recipe appeared in the Bellwether, a weekly newspaper for the
staff of Greenfield Village and Henry Ford Museum.

2 cups raisins
1 1/2 cups boiling water
4 teaspoons baking soda
4 teaspoons butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar
2 eggs
1 teaspoon salt
1 teaspoon vanilla
1 3/4 cups walnuts
4 cups flour

Pour boiling water over raisins; let cool. Stir in soda and other
ingredients.

Fill 6 or 7 greased and floured large soup cans to half full.

Bake at 350 degrees for 45 minutes to an hour. Cool and remove from
cans.

Makes 6 or 7 large loaves or 24 servings.

You could also make a great pumpkin pie or a chocolate orange cake. Yum!

DO THIS THE NIGHT BEFORE SO YOU DON'T HAVE THE STRESS OF ON THE SPOT COOKING.
Stuffed chicken breast-
Place clingfilm length on the counter
Place parma ham - overlapping - just short of the length of the clingfilm.
Place your chicken (Season Well)(slice along the length of the chicken)
On top of the ham.
Now place spicy sausage along the middle.

Roll into a log and twist the ends to seal.
Cover with tin foil and boil for 25 minutes.
ALLOW TO COOL AND PLACE IN THE FRIDGE OVER NIGHT.
Prepare you side serving and and place a griddle pan or fryingpan on the heat with a little oil and brown the ham - ensuring you heat the chicken thru.
This may seem like at lot of bother but it takes about 15-20 minutes to prepare and 25 minutes to boil - just a case of reheating to serve.

Delicious.

Well here's your choice, just for get the word "Impress" in the question and go to Mc Donalds or IMPRESS them, this is so easy my wife can make it:

Tournedos of Beef with Shallot and Morel Madeira Sauce

Ingredients:

2 (6 to 8 ounce) Tournedos of beef, sliced 1 to 1 1/4 inch thick, well-trimmed
1/2 teaspoon dried tarragon
1/4 to 1/2 teaspoons fresh coarsely ground black pepper
2 teaspoons Madeira
Pinch of coarse sea salt
For the sauce:
1/4 cup Madeira
2 medium shallots, minced
8 fresh morels, washed and patted dry
1/4 teaspoon chopped fresh tarragon
1 teaspoons unsalted butter, soft

To marinate the Tournedos: Can be done ahead, up to 6 hours.

Rub tarragon and pepper into the meat, place on a plate and drizzle with 2 teaspoons of Madeira. Cover and let stand at room temperature for up to 1 hour or refrigerate for up to 6 hours. Remove 1 hour before cooking.

Place chopped shallots, morels, fresh tarragon, and the butter in small ramekins set on a tray next to the stove one-hour before dinner. To pan sear and make sauce:

In a non-reactive sauté pan over high heat, heat the pan until nearly smoking. Sprinkle salt on the hot pan. Sear the meat until brown on both sides, about 3 to 4 minutes per side for rare. Sear longer according to personal preference. Transfer the Tournedos to a warm plate and set near by the stove.

Add Madeira to the pan, using a long wooden match and holding your head away from the pan, ignite the Madeira. Turn off the gas, and then tilt the pan back and forth until the flames subside. Add the shallots to the pan and cook until they begin to soften, about 3 minutes. Add the morels and sauté until cooked, about 3 to 4 minutes longer. Season with fresh tarragon. Remove the pan from the heat. Swirl soft butter into the sauce to "finish."

Hmmm...not sure what you have there to cook with, or what budget you are starting with...a couple ideas for you might include:

- pan-saute beef tenderloins, and serve with mashed potatoes and stir-fried young string beans....30 minutes start to finish if you get the mashed potatoes pre-made, otherwise an hour

- roast something, like a rack or leg of lamb, serve with au gratin potatoes and a salad...an hour or two depending on the roast

- marinate and grill a london broil, serve with skewers of green and red peppers, mushrooms and onions...half an hour plus marinating time

Good luck with your dinner, I'm sure it will be great!

Make something that your MIL doesn't traditionally make.

Personally, I'd forget about trying to impress them as that's usually when something goes horridly wrong and your stress level goes up too.

Make something you like and that you are fairly sure will turn out.

I don't do traditional things at holidays anymore, too many catastrophe's over the years - lol

Make a nice appetizer platter with some olives, good quality cheese, grapes, mixed nuts, crackers and some type of spread (like hummus or spinach/artichoke). Arrange it artfully on a nice platter. Maybe even choose a nice wine to go with it.
