We are trying to change our food habits and looking for some tasty alternatives to plain broccoli.

Try Jasmine rice. My sister makes this with her salmon and her family loves it.

2 tablespoons olive oil
2 tablespoons chopped onion
1/4 cup green peas
1 bay leaf
1 1/2 cups dry jasmine rice
3 cups water
salt to taste
DIRECTIONS
In a large saucepan over a medium-low heat, warm the oil. Add onion and saute for 3 to 5 minutes. Mix in green peas, bay leaf, and jasmine rice. Stir to coat the rice.
Pour 3 cups water into the saucepan and add the salt. Increase the heat to medium and let the rice come to a quick simmer. Reduce heat to low and let rice simmer lightly and sit uncovered until all of the liquid is absorbed. Cover the rice and remove from heat, let sit approximately 40 minutes.
I don't like fish but I like the rice.
Or how about asparagus.

Brown rice is better for you than white rice. If you are on a low carb diet then any green vegetable is good. You could always add a nice salad for a side dish.

What is wrong with a plain green salad? If you like fennel, slice thinly and mix with olive oil, balsamic vinegar and black pepper, leave to rest for about half an hour. It tastes great and goes really well with fish. Good luck and Merry Christmas xxxx.

SAUTED' MUSHROOMS AND ONIONS IN OLIVE OIL

COLE SLAW

TOSSED SALAD

GREEN BEANS/BUTTERBEANS

ASPARAGUS SAUTE'D IN OLIVE OIL WITH MUSHROOMS AND ONIONS

CAULIFLOWER SALAD
1 head cauliflower, cut up
Green grapes, cut in half (4-5 c.)
2 c. or more English walnuts
1 c. mayonnaise
1/4 c. sugar
1 tsp. mustard
Mix together mayonnaise, sugar, and mustard. Pour over salad and toss.

BROCCOLI CASSEROLE
2 boxes frozen chopped broccoli (10 oz. each box)
1/2 c. mayonnaise
3 eggs
1/2 tbsp. butter (melted)
2 tbsp. onion soup mix
Corn flake crumbs

Cook broccoli as per directions. Mix all the ingredients together.
Grease a 9 inch pie plate with butter. Sprinkle with corn flake crumbs on bottom of pan. Add vegetable mix. Top with more corn flake crumbs. Bake 350 degrees 50 minutes. Brown on top!!

Cottage cheese is very nice with blackened salmon. hearts of palm with pimento vinigrette and a serving of cottage cheese with your dinner should be perfect. Add a light wine, and your dinner is gourmet!

Savory Vegetable Rice Pilaf
Ingredients:
1 package (8 ounces) mushrooms, sliced (about 2 cups)
1 cup chopped onion
1 tablespoon butter or margarine
2 1/4 cups chicken broth
1 cup uncooked converted white rice
1 cup frozen petite peas, thawed
2 tablespoons snipped fresh parsley
Salt and coarsely ground black pepper to taste
1/4 cup (1 ounce) grated fresh Parmesan cheese


Directions:
1.Combine mushrooms, onion and butter in Rice Cooker Plus. Microwave, uncovered, on HIGH 4-5 minutes or until onions are translucent and mushrooms are tender.
2.Add chicken broth and rice to cooker. Cover and microwave according to package directions, carefully following recommended power levels and cooking times.
3.Remove cooker from microwave. Carefully remove lids, lifting away from you. Gently stir in peas and parsley; season to taste with salt and black pepper, if desired. Spoon rice into serving bowl; sprinkle with Parmesan cheese.

1 mango - peeled, seeded and chopped
1/4 cup finely chopped red bell pepper
1 green onion, chopped
2 tablespoons chopped cilantro
1 fresh jalapeno chile pepper, finely chopped
2 tablespoons lime juice
1 tablespoon lemon juice
DIRECTIONS
In a medium bowl, mix mango, red bell pepper, green onion, cilantro, jalapeno, lime juice, and lemon juice. Cover, and allow to sit at least 30 minutes before serving.

Some alternatives could be: a vegetable medley (or steamed or sautéed invidividual vegetables, i.e., asparagus, green beans, spinach, zucchini, peppers, glazed carrots), orzo pasta, rice (brown, wild, or pilaf), red bliss potatoes with herbs, or just a really good salad, maybe one with mesclun greens.
