If you are baking it, coat it in olive oil before baking. It does help keep it moist.

Coat with olive oil. The olive oil will let it brown good & help keep it moist. Also rub with sea salt. Cook on low heat take out as soon as it is done. Let it set for a few minutes after you take it out of the oven because it will still cook for a while in the cooling down process. Should be ready to serve. Do not over cook that is the main reason it is dry.

Your best bet is to marinade the chicken. I suggest you first take your chicken breasts and pierce them repeatly with a fork. Actual marinades are used for three basic reasons: flavor, moisture, and as a tenderizer. Salt, garlic, or pepper are things that add flavor, fats such as corn oil or olive oil add moisture, and acids like orange juice or vinegar act as a tenderizer. The sky is the limit for flavor, but for adding moisture, take your chicken breasts and marinade them for several hours in oil. I recommend adding some fresh garlic, rosemary, lemon juice and some lemon zest. If you use olive oil, use pure, don't waste your money on Extra Virgin for a marinade. Don't forget, the best way to get any marinade into the middle of the breast is by piercing it with many holes.

I will give you my secret recipe. It's great, taste super and makes your chicken awesome. It's a marinara.
1 large can of beer, Mustard, Ketchup, Salt, Pepper and a bit of red Chilly Powder. Put the Chicken breast into it for at least 4 hours in the fridge. Then you can put it on the grill or into a pan. You will be the chef of the day.

Marinade your chicken overnight in a brine.
Brine consists of water, salt and sugar.
Pour this mixture completely over the chicken in a big bowl and put it in the fridge overnight.
(Next day...rinse the chicken off before cooking)
This should prevent you from having dried out chicken.

Brine it first, it really works.
essentially, marinate the chicken breast in a
salt (& other spices) water mixture for at least a few hours and then cook it. Juicy juicy every time.

I use olive oil! Salt your chicken well, rub it in along with some italian seasoning, then pour on the olive oil. Bake it slowly (think small turkey here) and baste it often with the olive oil and seasonings in the pan. Yum-O!

I coat mine in olive oil and broil it over low heat on the stovetop in a pan with a lid on it. I turn it over twice not allowing it to over cook on any one side.
