Why do you wana adulterate your pigs in blankets with bloody avocado? Either have a pig in your blanket or don't.

Avocado is probably not the best thing to cook, it tends to get brown and mushy. Try cheese and spinach inside the rolls. It's a great vegetarian alternative!

how about avocado with leek strips as blankets wrap the avocado slices minus the skins in the leeks and bake or steam in the oven

The quick and dirty way is to use canned crescent rolls and wrap them around the avocado. If you are baking you'll be all right, if you are frying you need to cook the avocado first.
