I'm making homemade mac and cheese to go with a chicken I bought at the grocery. Any ideas on how I can make it more interesting (and still go well with the mac n cheese)?

You can use all different types of sauces on the lil buzzard. You can make a nice whole-grain mustard and honey baste ( 3 parts honey to 1 part w.g. mustard ) and just brush the birdies body and pop in a hot oven for a few minutes. They also have some nice mesquite flavored marinades that would work the same way. Lemon juice with some melted butter and a splash of dill, or roasted garlic viniagrette dressing would do well too. Even Catalina French dressing works well.

You probably wouldn't need to do anything to the chix you bought since they have most likely already seasoned the bird. The only thing that I could think of that would go with the mac/cheese is to brush some bbq sauce on it and put in oven to warm it up that should do the trick.

Put a little honey on the chicken and a few herbs.
You can put a little barbecue sauce on and have barbecued chicken.
The good part about it, it still will go with your mac & cheese!

Next time buy a chicken and roast it...... super simple with ten times the taste. The store ones are a ripoff. To answer, not much you can do to jazz it up. Basically at this point a store bought sauce packet would be it.

Make a chicken broccoli mac and cheese. If you like broccoli and cheese, adding the chicken would be a bonus!

take it off the bones... shred it throw it in a bowl with some BBQ Sauce, Serve it on Buns and you have pulled chicken sandwiches and Mac n Cheese

You definitely need some veggies: a fresh salad, crudités (carrot sticks, cucumber slices, cherry tomatoes), steamed veggies. Colorful veg go a long way in making a dinenr look delicious. Also, they're good for you.

Coat it in barbecue sauce and throw it under your broiler for two minutes to bake the sauce on.
