I would roast them on a cookie sheet until nice and brown.

Cut them into quarters. Place them in a bowl and lightly coat with extra virgin olive, salt and pepper. Skin side down and bake on 375 for 35 minutes and they'll be perfect.

Oven-Roasted Potatoes

1 envelope Lipton ® Recipe Secrets ® Onion Soup Mix

4 all-purpose potatoes, cut into large chunks (about 2 lbs.)

1/3 cup vegetable oil

1. In large bowl, toss all ingredients until evenly coated.

2. In 13 x 9-inch baking or roasting pan, arrange potatoes.

3. Bake at 425°, uncovered, stirring occasionally, 35 minutes or until potatoes are tender and golden brown.

VARIATIONS: Try substituting 2 sweet potatoes for 2 all-purpose potatoes. OR...stir in 1 tsp. each of garlic powder and soy sauce.

Wash and boil until tender. Cut into quarters. In a skillet, melt some butter, add chopped garlic and parsley. Fold in the potatoes until heated all the way through. Season with salt and fresh pepper.

Or ..mix one package of onion soup mix (the kind you use to make dip) with 1/2 cup of water and coat the potatoes (cut in quarters) and roast in a pan in the oven until golden.

One of my all-time fav's is rosemary redskins. Take as many potatoes as needed and cut them into either quarters or eighths depnding on size. In a large mixing bowl, put the potatoes in and drizzle with olive-oil. Then add salt and pepper to taste. Lightly sprinkle with whole rosemary (dried is OK) and paprika for color. Toss the potatoes until evenly coated and place on a sheet pan lined with my-new-favorite-thing, non-stick aluminum foil, (regular foil is OK too). Bake in a 350 degree oven until done, like maybe 25 minutes and ENJOY!

Cut them in quarters. Toss them in a little olive oil, salt, herbs, and pepper and roast them in the oven on a baking sheet for 30 minutes or so.

My favorite is to cut the spuds into wedges coat with olive oil, salt and pepper. Place wedges, skin side down, on cookie sheet and roast until golden brown. Additionally, you can add rosemary to the salt and pepper for added flavor.

I would dribble some olive oil on them, add whatever seasoning you like and roast them. Sometimes, we boil them until the are pretty well cooked then saute them with garlic and dill. YUM.

You can roast them in the oven or cut them into wedges and season and roast the wedges or just boil them plain.
