4 ripe avocados
2 limes, juiced
1/2 medium red onion, finely chopped
1 big handful fresh cilantro leaves, finely chopped
1/4 teaspoon ground cumin
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
Halve and pit the avocados; with a spoon scoop out the flesh into a bowl. Mash the avocados with a fork, leaving them a bit chunky. Add the remaining ingredients, and fold everything gently together to mix. Taste and adjust seasoning.
Lay a piece of plastic wrap right on the surface of the guacamole so it doesn't brown and refrigerate for at least 1 hour before serving.

Spicy Guacamole Dip
4 avocados
4 cloves garlic, minced
1/4 sweet red onion, finely chopped
1 jalapeno pepper, seeded and finely chopped
2 red chiles, seeded and finely chopped
4 tablespoons olive oil , divided
Juice of 1 lime
Salt and pepper to taste
Pinch of cayenne, for garnish
Cut the avocados in half lengthwise and remove the seeds.
Scoop out the meat into a medium-size bowl and mash with a fork. (Do not process in a food processor or blender.)
Gently stir in the garlic, red onion, jalapeno pepper, red chiles, 3 tablespoons of the olive oil, and lime juice. Add salt and pepper.
Transfer to a serving bowl, if necessary.
Drizzle the remainder of the olive oil over the Guacamole and sprinkle with cayenne for presentation. Serve immediately. Makes 3 cups.
Note: Guacamole Dip does not keep well, but adding a tablespoon of lemon juice helps preserve the color.

Unless it is a LARGE avocado, you'll need two at least. Mash it with a chopped plum tomato (preferably seeded), a tablespoon or so of FINELY chopped onion, a half teaspoon of minced garlic and one tablespoon of softened butter - not margarine. Salt and Pepper to taste. And if you are a fan of cilantro (i'm not) a sprinkle of chopped cilantro. Finish with a teaspoon of lemon juice to keep it from turning brown as quickly. Serve with warm chips for best results.

All-time Favorite Guacamole:
Notes: Serve with tortilla chips or crisp raw vegetables.
1 ripe avocado (3/4 lb.)
1/3 cup chopped firm-ripe tomato
2 tablespoons minced shallots or onion, rinsed and drained
1 tablespoon lime juice
1 tablespoon chopped fresh cilantro
1 clove garlic, peeled and pressed or minced
2 to 3 teaspoons minced fresh jalapeño chili
Salt
1. Pit and peel avocado. Place in a bowl.
2. Add tomato, shallots, lime juice, cilantro, and garlic. With a potato masher, coarsely mash mixture. Add chili and salt to taste, and mix.
Yield: Makes about 1 1/2 cups; 4 servings

Using fork, mash avocado with lime juice in small bowl.
Add cilantro, chopped onion, chopped garlic, serrano chilies and salt and stir to combine.

easy way one jar of sausa mild or hot remove inside meat of avacado including the pit add chopped onion and a little salt and pepper mix together Note leave the avacado pit in the guacamole it will keep it from turning brown

I am sure someone will give you a much better recipe but in case they don't, here's mine: I cheat and use the premix spice packets that sell in the supermarket (near the Knorr mixes and gravy mix packets). Just mush an avacado and stir in those spices.
