Bacon Wrapped Pork Tenderloin
INGREDIENTS:
1 pork tenderloin, cleaned and trimmed
3 slices of bacon
1 tablespoon of garlic powder
1 teaspoon of Lawry's Seasoned Salt
1 teaspoon dried crumbled leaf basil
1/2 teaspoon dried crumbled leaf oregano
1 teaspoon black pepper
olive oil
PREPARATION:
Combine garlic powder, seasoned salt, basil, oregano, and black pepper; rub seasoning all over the pork tenderloin. Wrap pork with bacon and secure with toothpicks.Take your olive oil and coat well. Place in a 9x13 pan and bake uncovered in a 375 to 400 oven for 45 to 60 minutes, or until pork reaches about 155°.
Make sure the bacon is really done. Remove and wrap in foil. Let stand for 10 minutes before slicing. This pork tenderloin recipe serves 2 to 4.

Roast Pork Tenderloin
INGREDIENTS:
2 slices bacon
1 to 1 1/2 pounds pork tenderloin
1/3 cup chopped onion
1 tablespoon butter or margarine
1 can (8 ounces) tomato sauce
3 tablespoons chopped sweet pickle or sweet pickle relish
2 tablespoon vinegar
1 teaspoon dried parsley flakes
1 teaspoon sugar
PREPARATION:
Arrange bacon slices over pork tenderloin. Place tenderloin on rack in a shallow roasting pan. Tuck thin end of meat under. Roast, uncovered, at 350° for about 25 to 35 minutes, or until internal temperature is around 160°.
In a saucepan over medium-low heat, melt butter. Cook chopped onion in butter until tender; add tomato sauce, sweet pickle, vinegar, parsley flakes and sugar. Simmer, uncovered, for 10 minutes. Serve with roasted pork tenderloin. Pork tenderloin serves 4 to 6.

Cinnamon Apple Pork Tenderloin
INGREDIENTS:
1 to 1 1/2 pounds pork tenderloin
2 tablespoons cornstarch
1 teaspoon ground cinnamon
2 tablespoons brown sugar, packed
2 cooking apples, peeled, cored and sliced
2 tablespoons dried cranberries or raisins
PREPARATION:
Preheat the oven to 400°. Place the pork tenderloin in a roasting pan or casserole dish. Combine the remaining ingredients in a bowl and stir. Spoon the apple mixture around the pork tenderloin.
Cover and bake 30 minutes. Remove the lid and spoon the apple mixture over the tenderloin. Return to the oven and bake 15 to 20 minutes longer, or until pork tenderloin is browned and cooked through. A meat thermometer in the center should register at least 150° to 160°.
Serves 4.

Pork Tenderloin
sprays cooking spray
2 tsp dried thyme, or 2 tbsp freshly chopped thyme
2 tsp dried oregano, or 2 tbsp freshly chopped oregano
1 tsp garlic powder
1 tsp onion powder
1 tsp table salt
1 tsp black pepper, freshly ground
2 tsp olive oil
2 pound lean pork tenderloin
Directions
Preheat oven to 400ºF. Coat a shallow roasting pan with cooking spray.
Combine thyme, oregano, garlic powder, onion powder, salt and pepper in a small bowl; set aside.
Rub oil all over pork. Sprinkle thyme mixture all over pork and transfer to prepared pan.
Roast until an instant-read thermometer inserted in center of pork reads 160ºF, about 30 minutes.
Let stand 10 minutes before slicing crosswise into thin (1/2-inch thick) slices. .

Well depending on your side dishes and what you like best , I have a few things I like to do
first thing is invest in a good meat injector so you can inject a marinade into the pork. buy some nice staple spices like garlic pepper, or lemon pepper ...
i like to make a marinade using soy sauce , brown sugar , little bit of dijon mustard or pinapple juice (either the pinapple or mustard depending on what you like) heat all this in a pan to taste (that means if its not salty enough add more soy if its too salty add water if its not sweet enough add more brown sugar)
Start with about half cup of soy and 1/4 c brown sugar about a tsp of mustard if u choose that , or about 1/3 cup pinapple juice ;o) then inject let sit atleast 2 hours in the fridge . i find if you put a bag or some platic wrap around it when it sits it will hold in the marinade close to the pork which makes it even tastier.
OR you can choose more of an Italian style
in a pan heat up about 1/4 cup olive oil , lemon juice (about 1 lemon ) garlic salt pepper a little sage .. then inject all of this into your pork.
OR just a dry rub of your favorite spices is great too! Good luck!

If you're from southern, make an incision inside pork tenderloin all way to other end, stuff with cut up bell peppers, onions, jalapenos and wrap in foil and slow-cook it over mesquite wood in bbq grill.

I guess I do it the chetto way, but here it is. get a package of powered onion soup (french is fine) put the pork and potatoes in a deep cookware, mix the onion soup powder with water and put into the cookware until the meat and potatoes are covered, cook at 350-400 for at least 1 hour and eat!! I have made this for my boyfriend and he loved it.
