TAMPICO STUFFED CHICKEN
Marinated chicken breast grilled and stuffed with jalapeño cream cheese. Topped with Espinaca con Queso. Served with rice and charro beans.

JALAPENO CREAM CHEESE
Soften 2 large packaged Philadelphia Style Cream Cheese and blend in 2 heaping spoonfuls of mayonnaise and 1/4 to 1/2 teaspoon of garlic powder. Blend until smooth and no longer lumpy.
Dice very fine 1-2 jalapenos removing the seeds and the stem. Can add jalapeno juice too. Add to the smoothed cream cheese and blend lightly.
The longer the cheese and peppers "sit" the HOTTER this mixture becomes.

Espinaca Con Queso
Ingredients:
2 Tbsp vegetable oil
1 medium onion, chopped
2 tomatoes, peeled, seeded, chopped
2 Tbsp canned chopped jalapenos*
10 oz package frozen spinach, thawed and
squeezed dry
2 cups grated Monterey Jack cheese**
8 oz cream cheese
1 cup half-and-half
1 Tbsp red wine vinegar
two 2.2 oz cans sliced black olives, drained***
salt and pepper
tortilla chips
Heat oil; saute onion until soft. Add
tomatoes and chiles; cook 2 minutes.
Transfer to mixing bowl and add next 5
ingredients. (We used an electric mixer.)
Combine thoroughly. Stir in olives. Season
with salt and pepper to taste. Spoon mixture
into baking dish and bake at 400°F until
bubbly and top is brown, about 35 minutes.
(We used the microwave). Serve with tortilla
chips.
* If you prefer, you can use canned green chilies, which are milder.
** If you love really hot and spicy dips, substitute pepper jack cheese for
the monterey jack cheese.
*** If you don't like black olives, leave them out.

I know this dish! It's a marinated chicken breast stuffed with jalepeno cream cheese and topped with 'Espinaca con Queso' whatever that is.
I used to order it when I went to a place called Garcia's in Carmichael, CA all the time. Unfortunately, I just moved to Michigan or I'd run over and ask the manager for you.
If anyone's in Carmichael, go to Garcia's (by the Home Depot and Carl's Jr.) and find out what's in it! We can figure out the proportions from there.
ETA: Thank you for solving the mystery of 'Espinaca'. Now that I know it's spinach, I feel mighty silly. Might want to put off moving to Baja or Gods only know what I'll end up eating on 'accident'.

Chicken Tampico
Ingredients:
2 Cup(s) Cheddar cheese, shredded
1 Large pack yellow rice
4 Ounce(s) Green chilies
1 Small jar diced pimentos
1/2 Cup(s) Onion
6 Chicken patties
8 Ounce(s) Cottage cheese
8 Ounce(s) Sour cream
8 Ounce(s) Cream cheese
Directions:
Preheat oven at 400F Bake for 30-45 minutes
Prepare rice according to package directions.
Add green chilies and pimentos to rice.
Spray 9X13 pan with cooking spray and fill with rice mixture.
Put 1 cup cheddar cheese, cottage cheese, sour cream, and cream cheese in a sauce pan over medium heat.
Pour cheese sauce over rice.
Put chicken patties on top of cheese sauce.
Cover with 1 cup cheddar cheese.
Bake.

My favourite pork recipe is my husbands pork hints and noodles. He simply cubes up anything pork we've to be had, browns it and provides it to a few cans of cream of mushroom soup diluted with a bit of milk. He then chefs a few egg noodles and serves the meat gravy over the noodles. Toss a salad and there may be dinner. As for hen, my mom in regulation gave me this recipe...it is delish and convenient to make: Kings Ranch Chicken Ingredients: a million/four cup margarine a million medium inexperienced bell pepper, chopped a million medium onion, chopped a million can (10 three/four ounces.) condensed cream of mushroom soup a million can (10 three/four ounces.) condensed cream of hen soup a million can (10 ounces.) RO*TEL Diced Tomatoes & Green Chilies two cups cubed cooked hen 12 corn tortillas, torn into chunk-sized portions two cups (eight ounces.) shredded cheddar cheese Directions: Preheat oven to 325 levels F. In a massive saucepan, prepare dinner pepper and onion in melted margarine till smooth, approximately five mins. Add soups, RO*TEL and hen, stirring till good mixed. In a thirteen x nine x two-inch baking pan, alternately layer tortillas, soup combo and cheese, repeating for 3 layers. Bake forty mins or till sizzling and effervescent. Serves eight. Instead of tortillas, I use a bag of damaged up Doritos. Gives the casserole a bit of extra zip.
