LATER: Just a further word on all the Butter recommendations you're getting here... Butter will work in brownies, but Shortening is a vegetable oil product - hydrogenated. So is margarine. If you're looking to stick as closely to the missing ingredient as possible, margarine is your choice. Butter is a dairy product instead.
