SEAFOOD FRIED RICE

This recipe only takes about 30-40 minutes by using some precooked and presliced ingredients and instant rice.

1 Tbs. Butter.
2 Tbs. Vegetable Oil.
3 Eggs(beaten).
1 Small Sweet Onion(thinly sliced).
1/2 cup Yellow Pepper (diced).
1 cup Mushrooms (4oz.;pre-sliced).
2 Tbs. Roasted Garlic(finely chopped).
1/4 Tsp.Salt.
1/4 Tsp.Pepper.
3/4 cups Carrots(shredded).
1 cup Frozen Peas.
1 Lbs. Medium Shrimp(pre-cooked and peeled).
1/2 Lbs. Crab Meat(Pre-cooked and cleaned).
1 can Crushed Pineapple(4oz.can).
2 Packages of Instant Rice.
SAUCE MIXTURE:
1/4 cup Low-Sodium Soy Sauce.
2 Tbs.Rice Vinegar(or Sake).
2 Tsp.Sesame Oil.
1 Tbs. Honey.


In a large sauce pan cook the rice according to package instructions,drain and set aside.In another sauce pan bring water to a boil and cook the carrots and peas(about 3-5 minutes)drain and set aside.
In a small mixing bowl mix all of the sauce ingredients together until they are all blended and set aside.
In a large non-stick fry pan(or Wok) stir-fry the eggs until it appears to be a dry-scramble and set aside.Put the butter and vegetable oil it the fry pan and stir-fry the onions,yellow pepper,mushrooms,garlic,rice and salt and pepper,stirring constantly until the onions are cooked through.Add the carrots,peas,eggs,shrimp,crab meat and sauce mixture and mix it all together.Heat until the shrimp and crab meat are heated through and hot.Top it off with the pineapple and serve.

I really like making jambalaya with chicken, sausage or shrimp. I buy the Zatarain Jambalaya mix and combine uncooked chicken, sausage, seasoning and rice with 2 1/2 cups of hot water in the microwave for 25 minutes. I cook the shrimp separately but cook the shrimp in an a skillet with butter, garlic and red pepper. I add red kidney beans and kernel corn to the skillet and them mix the rice and chicken/sausage mix. Its soo good!!
