EGGLESS BANANA BREAD
2 1/4 c. sugar
1 1/2 c. oil
3 c. bananas
3 tbsp. lemon juice
5 1/2 c. flour
3 tsp. soda
1 1/2 tsp. salt
1 c. nuts (chopped)
Cinnamon and sugar (mixed)
Combine sugar, oil, and bananas and lemon juice. Mix well. Add flour, soda and salt. Mix well. Add chopped nuts. Bake in bread pans at 350 degrees for 1 hour. Last 10 minutes of baking sprinkle loaf tops with cinnamon and sugar.

I have a banana nut bread recipe, but it requires eggs. Every recipe that I came across has eggs in it. While, don't use the recipe and don't put the eggs in there.
Lower Fat Banana Nut Bread Recipe:
INGREDIENTS
3/4 cup fat free sour cream
4 egg whites
1/4 cup chopped walnuts
1/3 cup raisins (optional)
2 teaspoons baking powder
2 teaspoons baking soda
6 very ripe bananas, mashed
2 tablespoons reduced fat margarine
1 tablespoon vanilla extract
1 teaspoon salt
2/3 cup packed light brown sugar
4 cups unbleached all-purpose flour
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). Lightly spray two 8x4x2 inch loaf pans with a non-stick cooking spray.
Combine the fat free sour cream, egg whites, vanilla, bananas and margarine and mix on medium speed of electric mixer until smooth, creamy and well blended.
Sift the flour, baking powder, baking soda, salt and light brown sugar into the banana mixture. Stir with a spoon until combined. Add more flour if necessary until a thick and rather resistant dough is formed. Fold in the optional nuts and raisins. Mix for 1 minute on the low speed of an electric mixer. Divide dough evenly between the two loaf pans.
Bake at 375 degrees F (190 degrees C) until golden and the center tests done. Remove breads from pans immediately and allow to cool on a rack

2 Cup Self Rising Flour
1 Cup Vegan Sugar (Can sub. 3/4C of Maple Syrup)
1 Cup Mashed Ripe Banana
3/4 Cup Chopped Nuts (Walnuts or Pecans)
1/3 Cup Oil
1/4 Vegan Milk
1 tsp or dessert spoon Vanilla Extract
1/2 tsp salt
1/2 tsp cinnamon ground
1/2 tsp nutmeg ground
1/2 tsp cloves ground
Pre heat oven to 350 fahrenheit (170 celsius)
Grease bread loaf pan
Mix Sugar, oil, milk, vanilla, banana slowly add to flour while mixing then add spices and nuts.
Place in greased pan and bake for aprox 45-60 min or until knife comes out clean
You can make a strong chai with the milk to add more spices and distinctive flavor

Dry Ingredients

In a medium bowl, mash banana with a fork.
Add the rest of the wet ingredients with the banana, mix.
Pour liquid ingredients into the dry ingredients.

My Crazy Banana Nut Bread
The Bottom Line I'm a vegan, I'm a vegan, I'm craaaazy!
You may think I've finally gone too in my experiments when you see this recipe. All these different flavors vying for attention surely must spoil the purity of what it's supposed to be. But there's nothing traditional about this recipe as far as I know and the aroma and flavor blend in a rich, exciting dimension. Scraping the batter bowl and smelling the goods baking is sometimes my only reward of baking, but this recipe not only promises but delivers a crowning achievement!
You may notice there is no oil, but it's in the peanut butter. Please use a brand as natural as possible. You may also note there is no silken tofu or milled flaxseed in water mixture, which is because bananas may also substitute for eggs here. I wouldn't change anything about it except not leaving it in quite as long. I used a big glass loaf pan filled halfway and a small saucepan with arm screwed off because a friend had borrowed my muffin pan. You can experiment with this.
Preheat oven to 350 degrees.
1 ½ c. whole wheat pastry flour
1 c. brown rice flour
2 tsp. Cinnamon
2 tsp. Baking cocoa
2 tsp. Baking soda
Mix together and add:
½ c. melted peanut butter
2 average-size mashed bananas
1 ½ c. vanilla-flavored soy milk
2/3 c. maple syrup
2 Tbsp. blackstrap molasses
1 Tbsp. Kahlua rum or vanilla
½ c. crushed walnuts
If you are allergic to wheat, just use all brown rice flour. If allergic to nuts, raisins could be used. Mix all together and pour into a couple of big loaf pans or muffin pans if desired. I left my big glass pan in for fifty minutes, the small saucepan for forty, but two loaf pans probably needs forty or forty-five and muffins maybe fifteen? Stick a knife in the middle to see if it comes out clean.
A little honey for a spread instead of butter or margarine tastes excellent. This is a whip to prepare and quite nutritious. You may not realize this, but baking cocoa has many minerals and antioxidants we need. Blackstrap molasses are a good source of calcium and some minerals. And natural peanut butter has monounsaturated fat that satiates your appetite so you will eat less and lose more body fat. I read yesterday that monounsaturated fats burn much faster and for many hours longer after a workout than do saturated fats, which tend to be stored in fat pockets.
So eat a couple slices of this bread or peanut butter on apple slices with calcium-fortified orange juice or maybe a peanut butter banana milkshake (hey, that sounds good!) for breakfast. Then workout how you prefer and you'll burn fat for most of the day. Keep eating monounsaturated fats instead of saturated and you'll keep burning fat. For lunch a big salad that includes olives or avocado and walnut oil for dressing; for dinner perhaps a stir fry using olive oil or a taco salad with guacamole and my bread. This is not just my opinion, but nutritionally-aware doctors' advice.
Hope you'll enjoy my 'crazy' bread! It's a dark bread and so looking at it to tell whether it's done won't work, but at least I didn't burn it. :-)
