Here is a recipe for a traditional mincemeat pie. All of the ingrediants are authentic in what is traditional. Today's standards are a little different as most mince pies don't have the meat in the filling. If you choose to create the mince rathar than the mincemeat then increase the fruits by a 1/2 cup each.

3 1/4 pounds lean ground beef
12 cups apples - peeled, cored and diced
6 cups raisins
1 cup brandy
1 tablespoon ground cinnamon
1 tablespoon ground allspice
1 tablespoon ground nutmeg
3 1/2 cups white sugar
DIRECTIONS
In a large skillet over medium heat, cook the ground beef thoroughly. Being sure not to over-brown it.
Place chopped apples and the cooked ground beef in a food processor and pulse until the mixture is made up of pea sized chunks.
In a non-reactive skillet combine the apple and ground beef mixture with the raisins, brandy, ground cinnamon, ground allspice, ground nutmeg and the white sugar. Simmer for 30 minutes.
Cool filling to lukewarm and pour into freezer bags (2 cups per bag). Freeze filling until needed. One baggie will fill one 8 inch double crust pie. Thaw filling before using.

Buy a jar of mince meat filling (from the grocery store) and there is a recipe on the label. You just pour into a pie shell.

easy way to do it is get some ready made pastry, its frozen in most suppermarkets, and you'll need pastry cutters. they'll also be in a super market, and come in a ptk of three. and a tart tin again in supermarkets. then get some mincemeat in jars not frozen meat ok, and cut out the pastry with the largest cutter put it in the tart tin, add the mincemeat, and make a top from pastry cut ,with the smaller cutter, its not a compilcated as it sound go to asda or tescos find a women shelf stacker of a certain age and ask for help with the things you need then you wont get a "what" ok. any way an even easier way is too get some from marks and spencer put in oven to warm through. sprinkle with icing sugar, throw the packet away and tell everyone you did make them ;-)

Unless you intend to make dozens of large pies, I would think that it would be un-economical to actually make your own from scratch. You can buy jars of ready prepared mince, which you just put into pastry cases.

GP's idea is very good. The filling is not easy to make and ends up very similar to the one you can buy.
