Every year when I would can my own tomatoes, I would always have more juice than tomatoes to put in jars. Rather than throw this excess juice away, I would put in big pot and add carrots sweet bell peppers onions and what ever veggies I had on hand. If I wanted spicy, I would add a few jalapeno or what ever chiles I had from the garden. After cooking the veggies, I would put through food mill and puree. Then back into the pot and add chiles last. If you cook the hot peppers all the heat will come out with the steam. I have actually burnt my face from this steam, so be careful. Then I would put in clean canning jars and hot water bath until jars sealed. My brother in laws used to fight over this stuff as it was really good.
