Do you have a crock pot, or slow simmer type thing? If so, make soups! They are easy and you can start them in the morning and they will be ready when you get home from work. Just put in some sort of meat (if you want) like a roast, or soup meat or something, and throw in whatever vegetables you like, and maybe some noodles, and spices and let it slow cook for several hours. Toss a salad to go with it, or some bread or something, and you have yourself a meal. Plus, there is usually a lot of it, so you have leftovers! Happy eating!

Get a (relatively) cheap cut of steak and cut it up into cubes. Cook in a tiny bit of oil on the stove top until done and then add a jar of Heinz beef gravy (near spices or sauces in your grocery store). Potato buds as a side dish to make super quick and easy mashed potatoes (just follow the directions on the box). Frozen vegetable as another side dish. Whole thing takes about 10 minutes from when you start pulling things out of the fridge until you're sitting down eating. Super easy. Pretty darn good too.

There are a lot of microwave meals that are very healthy and can be a good alternative. Healthy Choice, Smart Ones, and Lean Cuisine all make great meals with very low calories and carbs. The only thing you have to watch for is sodium, those can have a lot of sodium in them. Just don't eat them 3 times a day for weeks, or you could get a sodium toxicity. I also suggest those microwave packets of mac and cheese that Kraft makes, those are quick and very good.

I really can't cook and lived off ramen noodles and mac and cheese for a long time but I got the rachel ray express meals cookbook from a friend and everything in there is pretty darn easy to make and super tasty!!

Salad in a bag, with chicken strips that you can buy, or fish coated with a little olive oil and seasoned with lemon pepper, only takes about ten to twelve minute cook time add some rice a roni and a veg with it, great meal.

The time you nuke those burgers you could have a ready made salad and throw on some deli turkey, a little cheese, and whatever else you like on your salads and walah! A delicious and filling meal

try cooking some pasta, either elbow macaroni or another small noodle, let it cool. then you can add anything you like, chopped chicken, tuna, or turkey, add some mayo, maybe even drain a can of mixed vegetables. easy prep. makes a great cold salad. and keeps for a few days

do this, get chicken breast and marinate it in yogurt, with salt and pepper and little olive oil for thirty minutes. put it in the over with some veggies you like. and make brown rice. all will take about an hour to make. or you could just get frozen stuff and heat them up and make instsant rice, but that won't be as good.

Cheat a little...do it a little premade and a little home made.
Here are two meals I like that take minutes to prepare.
Shrimp, tortellini and pesto pasta

Mix store bought green pesto, with cooked cheese tortellini, and store bought, thawed, rinsed. precooked shrimp in a big bowl. Add chopped tomatoes (or cherry tomatoes). Colorful and good!
Home made Pizza
----------------------------
Buy premade pizza crusts ( I like whole wheat), spread with store bought pizza sauce (might come with the crust). Then top with your favorite toppings:
Pepperoni
grated cheese
grilled mushrooms, zucchinis, peppers
olives
pesto
*anything!*
