someone takes things for granted when he believes it will always be there so he doesn't pay it special attention now- for eg siblings, parents, partners, friends, etc. only when that person is no longer there then reality stikes.

chasing the pot of gold refers to chasing unrealistic dreams, hopes, standards, etc. you will never get what u are actually chasing but something less. like the grass being greener on the other side of the river...

When someone chases a pot of gold, they are chasing something unrealistic. The pot of gold saying comes from Ireland where leprechauns guard the pot of gold at the end of the rainbow. The legend goes that if you find the end of a rainbow, there will be a pot of gold waiting for you. However, we know that it is impossible to find the end of a rainbow!

In your quote from CLICK, the character is saying that life is full of disillusionment, sometimes the very things we chase after in life aren't worth the price we paid to get there. It's like the person who spends their whole life to obtain wealth only to find that they lost their family in the process.
