Beef and Vegetable Chili Mac
Ingredients:
1 pound lean ground beef
3/4 cup onion, chopped
2 garlic cloves, pressed
2 cans (14.5 ounces each) Mexican-style stewed tomatoes, undrained
1 can (15 ounces) black beans, drained and rinsed
1 can (11 ounces) Mexican-style corn, drained
1 cup beef broth
3/4 cup uncooked elbow macaroni
1 1/2 teaspoons Mexican seasoning
Sour cream (optional)
Chopped cilantro (optional)
Directions:
1.Heat Family Skillet over medium heat until hot. Cook ground beef, onion and garlic over medium heat until beef is no longer pink; drain.
2.Stir in tomatoes, beans, corn, broth, macaroni and seasoning. Bring to a boil; reduce heat. Simmer, covered, 20-25 minutes or until most of liquid is absorbed and macaroni is tender.
3.Let stand, covered, 5 minutes before serving. Garnish with sour cream and cilantro.
Swedish Meat Loaf Supper
Meat Loaf
1 can (4 oz0 mushrooms (pieces and stems ), drained and finely chopped
½ cup onion, finely chopped
¼ cup fresh parsley, snipped
1 cup fresh rye or white bread crumbs (about 2 slices of bread)
2⁄3 cup milk
1 egg
1 ¼ teaspoon salt
¼ tsp ground black pepper
¼ tsp ground allspice or nutmeg
1 lb (90%) ground beef
1 lb lean ground pork
Noodles and Creamy Gravy
1 package (12 oz) uncooked egg noodles
1 jar (12 oz) mushroom or beef gravy
2 Tbsp milk
¼ cup sour cream
1.Preheat oven to 350ºF. For meatloaf, finely chop mushrooms and onion using food chopper. Transfer to Classic Batter Bowl using Kitchen Scraper. Snip parsley using Kitchen Shears. Add parsley, bread crumbs, milk, egg and seasoning to Batter Bowl; mix well.
2.Crumble beef and ground pork into batter bowl; mix lightly but thoroughly. Shape meat into loaf in Stoneware Loaf Pan.
3.Bake 1 hour and 15 minutes to 1 hour 20 minutes or until meat is no longer pink in center and internal temp reaches 160ºF using Pocket Thermometer. Remove meat loaf to serving plate; let stand for 10 minutes.
4.Meanwhile, cook noodles in Professional 4 Qt Casserole according to package directions; Drain. For creamy gravy, heat gravy with milk in Professional 1 qt Saucepan over medium heat, stirring occasionally with Nylon Spiral Whisk. Whisk in sour cream; remove from heat.
5.Cut meat loaf crosswise in half. Cut one half into 8 slices and serve with noodles and creamy gravy. You can tightly wrap remaining half and refrigerate for up to 4 days if desired.
Gourmet Stuffed Burgers
(Great Grilling Recipe Card Collection)
2 lbs 85% lean ground beef
1/2 cup chopped onion
1/4 cup ketchup
2 garlic cloves, pressed
1/2 tsp salt
1/4 tsp ground black pepper
6 slices (3/4 oz each) American pasteurized process cheese food
4 strips bacon, crisply cooked, drained and crumbled
6 hamburger buns or onion rolls, split
Optional toppings: lettuce, sliced onion, tomato or pickles
1. Crumble ground beef into Classic Batter Bowl. Add onion, ketchup, garlic pressed with Garlic Press, salt and black pepper; mix gently but thoroughly. Form mixture into 12 round patties, about 1/4 inch thick. Fold cheese slices into quarters and place on half of the patties. Top with bacon and remaining patties; seal well, forming six stuffed burgers.
2. Prepare grill for direct cooking over medium coals. Place patties on grid of grill. Grill, covered, 11-14 minutes for medium (160F) doneness or until meat is no longer pink near center, turning once using Barbecue Turner.
3. Meanwhile, place bun halves, cut side down, on grid of grill. Grill 30-60 seconds or until buns are lightly toasted. Place burgers in buns. Serve with toppings, if desired.
Makes 6 sandwiches.

Here is one called Wayne’s beef macaroni and cheese. Ingredients * 1-pound box elbow macaroni * 2 tablespoons vegetable oil * 2 cups chopped green bell pepper * 2 cups chopped onion * 1 tablespoon chopped garlic * 2 pounds lean ground beef * 3 cups canned crushed tomatoes * Salt and pepper * 1 teaspoon each dried basil, ground cumin, and dried oregano * 2 to 3 cups grated Cheddar Directions Heat the oven to 350 degrees F. Cook the macaroni according to package directions; drain and set aside. Heat the oil in a skillet; add the peppers, onion, and garlic, and saute until soft. Add the ground beef and saute until browned. Add the tomatoes, salt and pepper, to taste, and the basil, cumin, and oregano. In a large bowl, combine the macaroni and the beef mixture. Spread this mixture into a 9 by 13-inch baking dish. Top with the cheese and bake for 20 to 25 minutes, or until the cheese is lightly browned and bubbly.

I am a "wing it cook". But for my kids I used to make meat loaf. But I added most of the vegetables (carrots, onions, peppers, left over vegetables work great) Blend them in the food processor, until they are very finely chopped with the seasonings, eggs, catsup and Oatmeal and whatever else you put in yours. Of course don't forget the meat. I use Oatmeal as the bonding product instead of bread or cracker crumbs. It gets another whole grain into the kids.
Spray your loaf pan and put in about half of the meat. Have two or three potatoes pealed and thin sliced season them. Make a layer in the middle then top it off with the rest of the meat. Put your topping on it. Catsup, Heinz 57 or whatever you like to use.
A salad and some crunchy bread on the side.
That's it. This is great if you have children.
You smuggle any and all kinds of veggies into your children without them really knowing. Plus it's a great way to use up leftover veggies.

GROUND BEEF ENCHILADAS
-1 1/2 lb. ground beef
-3 tbsp. oil
-Pinch of cumin
-12 corn tortillas
-1/4 c. ripe olives, chopped
-1 1/2 c. grated Cheddar cheese
-3/4 c. onion, chopped
-3 c. enchilada sauce
-2 tsp. salt
-Oil for frying
Method:-
Saute' meat and onions until meat is crumbly and onions are limp. Add 1 1/2 cups enchilada sauce, cumin, salt and simmer 30 minutes. Meanwhile, soft fry tortillas in oil and drain on paper towels. Dip each tortilla in remaining heated enchilada sauce, coating both sides. Add ripe olives to cooked meat and divide mixture among the tortillas. Roll and place overlapped side down in baking dish. Spoon remaining sauce over. Bake at 375 degrees for 20 minutes. Sprinkle with grated cheese.
Can substitute cooked chicken for ground beef.
ENCHILADA SAUCE:
-1/4 c. onion, chopped
-1 clove garlic, minced
-2 tbsp. oil
-2 cans chicken broth
-1 tbsp. chili powder
-1/4 c. flour
-1 tsp. salt
-1 tbsp. oil
-1 (10 oz.) can red chili sauce
Method:-
Saute onions and garlic in oil. When tender, add to boiling broth. Mix all other ingredients with chili sauce to make a heavy paste. Reduce with some of the broth to pouring consistency, to avoid lumping, and gradually stir into hot broth. Stir 5 minutes, let simmer 10 minutes. Makes 1 quart.

Try Hamburger stroganoff
1 lb hburg
2 cans cream of mush soup
2 cans of mushrooms, drained
onion, to taste
1 16 oz container of sour cream
1/2 soup can of milk
egg noodles
brown the hamburger and onions till done, drain and remove from heat, add in soup, milk, mushrooms and stir to well mixed. Add in sour cream. Cook until noodles are done or longer.
this is good in a slow cooker also or cooked for 1 to 2 hours.

Something similar to Sloppy Joes
1 lb ground meat
1 onion chopped fine
1 garlic clove chopped fine
1/2 green bell pepper, chopped
1 cup ketchup
1/4 cup water
2 Tablespoons brown sugar
3 Tablespoons lemon juice
2 Tablespoons grape/cider vinegar
1 Tablespoon prepared mustard
1 Tablespoon worshestershire sauce
dash or 2 of tabasco (or any good hot sauce)
salt/pepper to taste
fry up the meat with the onion, garlic, bell pepper, till meat is browned (drain fat), then dump everything else in there, stir well, let simmer 15 minutes, then serve on buns like sloppy joes

Make a pizza. Saute the beef with garlic & onions, place on pizza shell with sliced tomatoes, mozzarella, mushrooms - whatever you like, and bake at about 375.

Serving Size : 8
1 pound ground beef
1 medium onion, chopped

1 jar (1 pound 10 ounces) Pasta Sauce
1 jar (8 ounces) marinated mushrooms, drained and chopped (optional)
1 cup shredded Cheddar cheese (about 4 ounces)
1 package (12 ounces) refrigerated large flaky biscuits (8 biscuits)
Preheat oven to 375°F. In 12-inch skillet, brown ground beef with onion and salt over medium-high heat; drain. Stir in 1 cup Pasta Sauce, mushrooms and cheese.
Roll or press out each biscuit to a 6-inch circle. Place 1/2 cup beef mixture on each dough circle; fold over and press edges to close. Seal completely by pressing firmly along edgesÊwith the tines of a fork. Arrange on cookie sheets. Bake 13 minutes or until golden. Serve with remaining sauce, heated.

I had the same dilemma last night. I made some salisbury steak with mine. With a side of mashed potatoes and gravy and green beans with wheat rolls. Delicious.
! lb of ground beef
1 egg
1 tsp of worchestire sauce
black pepper and salt
1/4 cup catsup
and 1 can (10.5 oz) condensed french onion soup
2 tsp flour
2 tsp water
Mix 1/3 can soup, egg, salt and pepper, and beef in large bowl.
Form into 6 patties
brown on both sides
In small bowl mix 1/3 can soup, 2 tsp flour, catsup, water, and worchestire sauce
Pour over patties and let simmer for 20 minutes stirring occassionally adding a little water as needed because it will thicken.
Serve over mashed potatoes with a green veggie as a side.

Taco Soup
1 lb of ground beef
1 (1.5 oz) Rotel tomatoes with chilies
1 can of red kidney beans
1 can corn
1/2 can of black beans
1 package of taco seasoning
1 package of dry ranch dressing mix
1 can water
Brown beef and drain
add remaining indredients
heat on low until heated thoroughly
Serve with tortilla chips or over rice.

Brown the beef with an onion (add salt & pepper to taste), drain excess oil off. Pour in 2 cans (or 1 lg) can of pork n beans, stir together and heat through. This is a boy scout recipe (for camping) and I never have leftovers.
Brown the beef with an onion, 1/2 lb of bacon (cut into little bites), salt & pepper. Drain excess grease off. Stir in a can of cream of mushroom soup and stir together. As soon as you are ready to serve, stir in a container of sour cream. Serve over buttered egg noodles. Cheap, easy version of Stroganoff.

You could make Beef and Potato Burritos. Just brown the beef with salt pepper and ground cumin (if you like), while browning, make thin slices of potato about the size and thickness of a stick of gum, with a little olive oil cook the potatoes in another pot until a little brown and tender. Add the drained ground beef and green onion if you like. Put the mixture in tortillas and add some shredded cheese (or small slices) and roll up. This is one of my kids' favorites!
