Do you mean like an Alfredo sauce? Alfredo sauce is very simple to make and it's up to you how thick to make it.

Simply start by melting some butter, about half a stick will do. When the butter is melted, add about 2 cups of chicken stock. Let that simmer and reduce by a very little bit. Once that stock has simmer down somewhat, add in about 1-1 1/2 cups cream. Slowly bring this to a simmer. DO NOT BOIL or it will curdle. Add in some freshly cracked black pepper and continue to stir. Next, toss in about 1/8 cup of parmesan cheese and stir until incorporated.

Those are the main ingredients in an alfredo sauce. You can always add in other flavors to please your own palate. Try some parsley, or basil, or maybe some garlic. It's up to you to experiment.

If you want to thicken this anymore, simply take some extra stock and a teaspoon or so of cornstarch or flour. Mix together well and slowly pour into your simmering sauce. This will thicken the sauce and it's totally up to you how thick to make it.

Don't use so much thickening ingredient (ie:flour or cornstarch or whatever you use). Also, use powdered milk to thin it.
