First things first, before using your stainless steel cookware to actually cook, try boiling vinegar in them for a short time. This will smell horribly, but will actually make your cookware a little nonstick. And you should do this about every 3 months or so.

Next, to fry up some tasty tots in your stainless cookware, you've got to have a fat to keep them from sticking. I agree with a previous poster....although it's not the healthiest, potatoes fried in a little bacon grease are heaven on earth. If that is not available, canola oil or peanut oil are great too.

oil in the bottom of the pan yes! Also making sure the pan is very hot before adding the potatoes will help in keeping them from sticking and turning into mush from turning them over so much.
Once you get the pan good and hot(with the oil in it) add the potatoes and turn the heat to medium high. Try not to flip or stir the potatoes too much. Also, I like to microwave my potatoes for a few minutes til they are about half way cooked. And then slice and add them to the hot pan. Also, certain potatoes will fry better than others. Try to stay away from overly starchy potatoes. Red potatoes work well. Any type of waxy potato will work much better than baking potatoes.

As long as your stainless pan is not scratched on the bottom it should not stick that bad to the potato's. never use a metal spatula on the pan only rubber or wooden, better for pan. For cooking the potato's, my favorite is butter, garlic, salt and paprika. use about a cup of butter to fry than and then add in fresh garlic.about 2 cloves teaspoon of salt and sprinkle on paprika as they cook . For a little more flavor add in some chopped onion. hope this helps Rob

Use enough oil to cover the bottom of the pan and fry away. I actually like to use bacon grease instead of oil when I fry potatoes. It works the same way, but the flavor is much better.

Keep it simple man. A little vegetable oil in the pan, and you're golden. Just stir or flip them every minute or two, so they don't stick.

put cooking grease in the pan and stand back when you put the potatos in their or the grease wll pop up at you.
