You can take a photo to a place that does that screen printing stuff and have them put it on a silver key chain, then add the date. I've seen this done but can't remember where it was at a mall.

A weekend away sounds nice, and it doesn't have to be on their anniversary weekend, it can be anytime they see fit. Even going to a nearby bed and breakfast would be good.
