Fry some shallots until brown. Then add (drained) sweet peas (1 500g can for about 3-4 pcs of your pork medallions, depending on the size). Add some stock and stew until soft. Mash the sweet peas while adding egg white and bread crumbs.
Sprinkle some pepper and sage on the pork loins. Then cover each piece with the mashed sweet peas (all round) until it looks like a pattie. Put in baking tray (buttered).
Preheat oven to 200. Then put in for 5 mins. Take out turn them around and bake for another 5 mins.

My husband would suggest grilling the medallions until just cooked, in the meantime pan frying some peeled and chopped apple wedges in a little sugar and honey and some water until soft then pour over the pork. Delish!

Lay the pork on individual pieces of foil and then put some chopped up apple, mushrooms, onions, salt pepper, and a squirt of honey and wrap up the parcel, and cook for about 20-25 mins on about 170 degrees c. The pork then makes its own yummy juices and you can serve it all with some green veggies and roast potatos, yum!

coat the pork in flour (add any herbs if you want to the flour)and then egg wash then bread crumbs fry in butter until browned then place on a baking tray and finish off in the oven 180 deg for about 10-15 min then fry some onions ,garilc and add some marsarla wine or cider (its all good )and pour over the pork at the end
