I'd hate to throw it out or give it to the birds just yet. Does anyone have any good recipes for day old italian bread? Dinner, lunch, snack, dessert-doesn't matter to me-thanks!

Tomato Bruschetta with Basil Spread

12 slices French bread -- 1/2 inch thick
1/2 (8-ounce) package reduced-fat cream cheese (Neufchâtel) -- softened
1 tablespoon chopped fresh oregano or basil leaves
OR
1 teaspoon dried basil or oregano leaves
1 small tomato -- chopped (1/2 cup)
1 medium green onion -- sliced (2 tablespoons)
1 tablespoon chopped ripe olives

Set oven control to broil. Place bread slices on cookie sheet. Broil with tops 3 to 4 inches from heat 1 to 2 minutes or until lightly toasted.

Mix cream cheese and basil; spread on untoasted sides of bread slices. Broil about 1 minute or until cheese mixture is melted. Top with tomato, onion and olives.

Try a bread salad from All Recipes. I had this for the first time this summer. Our host told us this is how Italians would use up leftover bread. If the bread is still very fresh, toast the pieces until it is about 1/2 as dry as a crouton.
It was delicious.

1 clove garlic
1 (1 pound) loaf Italian bread
1 cup chopped tomatoes
1 cup cucumber - peeled, seeded and chopped
1 cup chopped red onion
1 clove garlic, minced
2 cups chopped fresh basil
1/8 cup chopped fresh thyme
1/4 cup olive oil
2 tablespoons balsamic vinegar

Rub a peeled clove of garlic around a wooden salad bowl.
Pull apart or chop the bread into bite-size pieces.
In the prepared salad bowl, combine the bread, tomatoes, cucumbers, red onions, garlic, basil and thyme. Add enough olive oil and vinegar to lightly coat, toss and serve.

You could also make delicious Zuppa di Pomodoro - I have, and it's great!...

Zuppa di Pomodoro - Tomato soup and crusty bread.

Ingredients

* 2 onions, chopped
* 2 garlic cloves, crushed
* 2 Tbs extra-virgin olive oil
* 6 pounds ripe, red tomatoes, quartered
* 1 tsp salt
* 1 tsp sugar
* 3 fresh thyme sprigs
* 1 bay leaf
* black pepper, freshly ground
* ¼ cup basil leaves, chopped
* pinch of cayenne pepper

Directions

1. Heat the olive oil in a large pot, over a medium heat. Cook the onions and garlic until the onions are soft and just turning gold.
2. Add the tomatoes, salt, sugar, thyme, bay leaf, and basil. Stir and bring to a boil over a medium-high heat.
3. Cook, uncovered, for 15 minutes. The tomatoes should be thoroughly cooked and disintegrating.
4. Let cool until the pot is easy to handle.
5. Put the soup in a blender or food processor in small batches. Thoroughly puree the soup. (You may want to strain the soup to remove any seeds or skin after processing.)
6. Taste and add the black and cayenne pepper.
7. Reheat and serve.

i have a very easy recipe for italian bread ......
i hope u like it.......
A special italian toast with cream cheese filling, made with sliced French or Italian bread, eggs, cream cheese, and other ingredients. Serve with maple syrup or fruit topping.
INGREDIENTS:
1 long loaf French or Italian bread, about 8 to 10 ounces
4 ounces cream cheese, softened
1/2 cup finely chopped pecans
4 large eggs
1/4 cup milk
1/4 cup water
3 tablespoons butter
1 tablespoon Canola oil
PREPARATION:
Cut bread on the diagonal into about 16 slices. Spread cream cheese on 8 slices of the bread, on one side only. Sprinkle pecans over slices with the cream cheese spread. Top each spread slice with a plain slice of bread. You will have 8 "sandwiches." Beat eggs and milk in a shallow bowl until smooth. Add sandwiches to the mixture, turning several times to coat thoroughly.
Heat butter and in a heavy skillet over medium heat. When butter stops foaming, add all of the sandwiches in a single layer. Fry for about 6 to 8 minutes, turning once, until golden brown and crisp. Serve with maple syrup or other fruit topping.
Serves 4.

Hi........been there, done that b4, lol. U can bring it back to life a bit by steaming it just a bit---just make sure the water doesn't actually touch the bread, steam only. But what I usually end up doing is using the day old bread for making bread crumbs for making other things, such as breading chicken breasts, fish, veal, etc. Just let the bread dry out till it's hard then break it up & mulch the hell out of it in a food processor or blender. Spread the crumbs on a cookies sheet to continue to air dry & evaporate any leftover moisture (if u don't dry them out, will go moldy in storage). Then store in a zip-loc bag or air tight container..easy peasy!!! >>>ZETA

you can make a panni. Butter one side of the bread and fill it with your fillings I like brie and turkey with honey mustard. And then grill it, if you don't have a panni pan, then put a heavy pot on the top of the bread and let it sit for a few minutes. They are so good.

You can also make a bread salad. Cube up the bread and in a salad bowl combine tomatos, onions, basil and parsley and mix with a homemade oil and vinagar dressing and then add the bread and let it sit for a few minutes.

You can also freeze it. It freezes well and to defrost, leave it on your stove for about 45 minutes (or longer)

Bread crumbs! Throw it in the food processor with some italian seasoning.

Or you could just cut the bread up and add it to your favorite marinara sauce as you would with pasta. I saw the _dreaded_ Rachael Ray do this and call it "bread gnocci". I have to admit that I liked the idea.
