You are very kind and toughful - your ideas are quite nice, and it sounds like you are quite close to your bf family.

Now, consider what kind of jewelry the mom wears normally: usually it would be something she would get from her husband - good amber and coral are very expensive (not sure about your budget, but here you are looking in the several hundred). Another idea is something from William Sonoma: if she is a good cook, she will appreciate it. You can taylor to a meal you shared with her - "I remember you make that great casserole, and I thought this special Le Creuset dish would make it all the more special"... :))
I like the card holder for the dad - unless he has some hobbies. Does he play golf? does he smoke? Also, is he an office-bound engineer, or someone going around on site (building sites...). If on building sites, consider something weatherproof from LLBean.. a bit funky (depending on the age and character), and a bit classic - it could be a jacket, a pair of boots (you can enroll the mom for the sizes...).

Good luck and enjoy the holidays!!!

Why not give them something like a gift basket with foods from your country and treat them to your favorite recipe from home. They might also like to see pictures of your country ... engineers are usually very interested in the architecture so pictures of famous buildings are usually neat. They sound like they looking to get to know you better and that is TERRIFIC!

There is obviously a culture difference. With this in mind I sugest you take a photo from each year of your life along with background history of your native country and in conjunction with that find a picture of their son, and your spouse for each year along with a history of his upbriing (I.e: a picture in the beautiful terrain in your country when you were six...a picture of him at the beach when he was six...

What a great gift. One that will keep on giving...forever....
