how do i prevent it ? also what is the stuff that forms on the surface of the soup or gravy that i'm boiling ?

That is the fat cooking off the meat. All meat products are going to emit grease/fat when boiled. The best thing you can do is wait until it cools, it will come to the top and skim it off. That way you get all of the flavor and less of the fat!

The stuff on top is the fat. Try boiling the meat first and spoon away the fat. That cleans and cooks the meat but changes the taste.
