Hmmm, almond extract? In Bailey's? This must not be the recipe you lost, but I give some of this as gifts every Christmas and it makes people happy!

--2 cups half and half (light cream)
--1 14-oz. can sweetened condensed milk
--1 1/3 teaspoon instant coffee or instant espresso
--1 egg yolk, beaten
--1 cup Irish whiskey
--1/3 cup rum
--2 tablespoons chocolate syrup
--1 tablespoon vanilla

In large heavy saucepan, combine cream, condensed milk,
and coffee powder. Cook and stir over medium heat until dissolved. Gradually stir about half the hot milk mixture into the beaten egg yolk; return all to the saucepan. Bring mixture just to the boil. Cook and stir over medium heat for 2 minutes.

Remove the pan from the heat. Let cool slightly, then pour through one or two layers of cheesecloth set inside a fine-mesh colander, into another container. (Note: my original recipe did not call for this step, but it's important--otherwise you end up with unappetizing tiny flecks of scrambled egg in your Baileys; yecch.)

Add the whisky, rum, chocolate syrup, and vanilla to the mixture and stir until well-combined. Let cool to room temperature.

Transfer mixture to a container with a tight-fitting lid, or if you are going to give it as gifts, divide it among clean bottles. Chill at least 4 hours before using, but it'll keep very well for a few months in the fridge if given the chance. :)
