I like vegetables when they are cooked right. It also locks in the flavors. I usually steam it coz most of the vitamins get "cooked off" also, stir frying is a good way to lock in flavors as well as the nutrients.

A well cooked vegetable is generally a dead vegetable. I think the best way to keep the vitamins is to steam them for a short time. The brighter the colours remain the more vitamins are still in existance maybe.

You should never overcook vegetables. For instance, water soluble vitamins very quickly evaporate when cooked in water. Try steaming vegetables. That way, they're tastier and they keep most of their vitamins. But, there are also some substances whose level in vegetables increases while cooking (good example is tomato's licopene), so you can also include in your diet some home made tomato sauce. Keep on mind to season your veggies with olive oil, so oil soluble vitamins can disolve in your body.

steam would be best if your objective is to preserve all the natural juices and vitamins from it. But you can also try sauteing it in butter or spalsh in some tuna...it would still have the nutrients you want plus the yumminess. :)

If you want to preserve their macronutrients just steam them enough for tenderness. Stir frying is not bad either. Cooking the heck out of them tends to diminish their nutritional value.

Cook them gently. They start losing vitamins the moment thay are picked. If you boil them hard, and overcook them, they will lose all their vitamins.
