The XT is a good choice. I personally feel that the newer model, the XTi doesn't offer enough extras to justify the extra $168 (They cost $492 vs. $660 for the body at BeachCamera.com).
Here's two in-depth reviews for the Rebel XT, in case you're still wondering about some specifics:

My only gripe with the XT / XTi is that they are so small! This might sound trivial, but if you're shooting dozens of pictures a day, it's nice to have a decent size grip. Try it in a shop before you buy it. You can compare the XT to say, the Nikon D70s. This is a larger camera, but it's about the same in terms of price and performance. Regarding the eternal Canon vs. Nikon debate - you really can't tell the pictures apart. I personally use a Nikon because they had the best package for my particular shooting style and budget.
If you haven't thought about lenses yet, the kit lens for the XT is an 18-55mm zoom. That's a decent zoom range for indoors, landscapes, street photography etc, but the 18-55 is also a really cheap lens. (You CAN tell the difference between a $100 lens and a $500 lens.) If you're budget permits, the Rebel XT and the Canon 17-85mm zoom make a killer combo. That's a seriously good lens, and the total price is still under $1000. The 17-85 also has built-in image stabilization, unlike the 18-55, so that should make Japandra happy, too ;-)
Add a 1 or 2 GB memory card (the 'SanDisk Ultra ll' would be a great choice), and you're set.

I currently own the Pentax K10D, and its a wonderfull camera. The K100D like the previous poster said is better then the Nikon D50/D40 and on par with Rebel XT.

read these reviews on Pentax's and realize that its a great system to get into.

Rebel XT - standard kit is the cheapest one. However I recommend Canon Rebel XTi - 400D + Canon EF 17-85 IS USM (IS = Image Stabilizer + USM = ultrasonic motor = fast focus + 5x zoom)

nikon has cheaper lenses than canon.. but personally i like canon much better because it has wider variety of lenses than others, and those best and expensive ones can be mounted in this light and tiny masterpiece (canon 350D rebel xt)... if you want, try to compare the results of a canon and a nikon! let's say a 350D or 400D with a nikon D100.. you probably would prefer canon ones.. i wouldn't even suggest sony alpha or olympus SLR.. but if you got more money, Leica has great DSLR too!

Rebel XTi is a great SLR, just keep in mind, its image stabalization is not built into the body (like Sony's for instance), but into the lenses.
So if you ever want to buy a new lense for the XTi, you'll have to go with a Cannon one.
Don't know if that matters to you or not, but it's something to keep in mind. :)
But I think you'll be happy with a Rebel XTi if y ou get one.

I work at a high-end camera shop. Take a look at the Pentax K100D. If you want great features for a low price, that's your best bet. It has better in-camera stabilization than Sony, the lens it comes with is better than Canon or Nikon's kit lenses, and it is a lot smaller than most cameras in its class.

I've sold a lot of cameras by a lot of brands in my time at my current job, and the Pentax cameras are the most consistant with regards to customer satisfaction, in my experience. I just ordered a K10D (the K100D's big brother) for myself yesterday.
