Fudge comes in different flavors and we can't find one that even sounds remotely like peppermint fudge. I found 2 on different websites that was called peppermint fudge but there was no chocolate involved. Isn't fudge "chocolate"? Please help with anything you can. Thank you in advance for your help.

This might be a little more up your alley, but just remember, peanut butter fudge has no chocolate in it remember...

INGREDIENTS
2 (10 ounce) packages vanilla baking chips
1 (14 ounce) can sweetened condensed milk
1/2 teaspoon peppermint extract
1 1/2 cups crushed candy canes
1 dash red or green food coloring
DIRECTIONS
Line an 8 inch square baking pan with aluminum foil, and grease the foil.
Combine the vanilla chips and sweetened condensed milk in a saucepan over medium heat. Stir frequently until almost melted, remove from heat and continue to stir until smooth. When chips are completely melted, stir in the peppermint extract, food coloring, and candy canes.
Spread evenly in the bottom of the prepared pan. Chill for 2 hours, then cut into squares.

This one was a hit at my house. I only had 1 cup of crushed candy canes on hand, and it turned out great (12 candy canes = 1 cup crushed). I almost think that 1-1/2 cups might have been too much. My husband took a bunch to work and they were gobbled up quickly!

My 6 year old loved this fudge. I didn't really like the vanilla and peppermint combination, but it was very easy to make. My boss also liked this alot.

This is really great candy. I don't know if I could classify it as fudge- because it is the texture of a chocolate bar. The flavor is great. I only used 1 cup of crushed candy canes. I added about 2 tsp. of peppermint extract though so that you could actually taste the mint. I colored it red- and thought it to be a bit of an eyesore. I didn't have any extra candy canes to crush and sprinkle on, but that would've made it look great. Instead, I had some green mint chips. I melted them in the microwave, and spread them over the fudge. It was green and red layered- it really added a lot to the presentation. I will try this with milk chocolate too. Thanks.

This is my second year making this recipe and I will probably make it every year from now on. Everyone who's tasted it raves about it, even my 3 kids who don't care all that much for peppermint. A few trial and error tips: Last year I added the red food coloring and the fudge came out pink.. I wasn't really pleased with that. This year I left out the food coloring altogether and I think it's much prettier this way. Also, there is no need for the added fat of "greasing" the foil. Use Glad's Press and Seal Wrap (make sure you refrigerate for the full 2 hours!) and it peels right off with no sticking. Also, make sure you use candy canes that are easy to crush. If the chunks are too big the fudge won't cut easily. Last year I used the individually wrapped, round peppermints but I thought it was better this year using regular, cheapo candy canes. I put a tin of this in all of my Christmas packages this year, it's a nice change from the traditional chocolate with nuts fudge that everyone else makes. Now somebody please stop me before I go eat it all.

You can make white chocolate fudge. Use a regular fudge recipe. To make the swirled peppermint fudge you will use the white chocolate in two separate bowls in one bowl you will add red food coloring but put peppermint flavoring in both bowls. pour the white fudge into your molding/firming pan and then start swirling the red fudge through the white "chocolate" with a butter knife or small icing spatula. let set until molded and firm.

Use a basic Fudge recipe adding chopped up Peppermint candies.(kind of like you would nuts) Very yummy.

MINT CHOCOLATE FUDGE


1/2 cup butter or margarine
3/4 cup cocoa
4 cups confectioners' sugar
1 teaspoon vanilla extract
1/2 cup evaporated milk
***Pastel Mint Topping***
3 tablespoons softened butter or margarine
1 tablespoon water
1/4 teaspoon mint extract
1 1/2 cup confectioners' sugar
2 drops green or red food color

Line 8-inch square pan with foil. In medium microwave-safe bowl place butter. Microwave at HIGH (100%) 1 to 1 1/2 minutes or until melted. Add cocoa; stir until smooth. Stir in confectioners' sugar and vanilla; blend well (mixture will be dry and crumbly). Stir in evaporated milk. Microwave at HIGH 1 to 2 minutes or until mixture is hot. Beat with whisk until smooth. Immediately pour into prepared pan. Cover; chill until firm. Spread Pastel Mint Topping evenly over fudge; chill until firm. Cut into 1-inch squares. Cover; store in refrigerator.

Pastel Mint Topping In small mixer bowl beat 3 tablespoons softened butter or margarine, 1 tablespoon water and 1/8 to 1/4 teaspoon mint extract until blended. Gradually add 1 1/2 cups confectioners' sugar and 2 drops green or red food color. Beat until smooth.


PEPPERMINT BARK

1 (12 ounce) package NESTLE® TOLL HOUSE® Premier White Morsels
24 hard peppermint candies

LINE baking sheet with waxed paper.
MICROWAVE morsels in medium, microwave-safe bowl on MEDIUM-HIGH (70 percent) power for 1 minute; stir. Microwave at additional 10- to 20-second intervals, stirring until smooth.
PLACE peppermint candies in heavy-duty plastic bag. Crush candies using rolling pin or other heavy object. While holding strainer over melted morsels, pour crushed candy into strainer. Shake to release all small candy pieces; reserve larger candy pieces. Stir morsel-peppermint mixture.
SPREAD mixture to desired thickness on prepared baking sheet. Sprinkle with reserved candy pieces; press in lightly. Let stand for about 1 hour or until firm. Break into pieces. Store in airtight container at room temperature.

Peppermint Fudge

1 2/3 cups granulated sugar
2/3 cup evaporated milk
2 tablespoons butter or margarine
1/4 teaspoon salt
2 cups miniature marshmallows
1 1/2 cups semisweet chocolate chips
1/2 teaspoon vanilla extract
1/4 teaspoon peppermint extract
1/4 cup crushed, hard peppermint candy
Combine sugar, evaporated milk, butter and salt in medium, heavy-duty saucepan. Bring to a full rolling boil over medium heat, stirring constantly. Boil, stirring constantly, for 4 to 5 minutes. Remove from heat.
Stir in marshmallows, chocolate chips, vanilla extract and peppermint extract. Stir vigorously for 1 minute or until marshmallows are melted.
Pour into foil-lined 8-inch-square baking pan; cool for 1 minute. Top with candy, pressing in slightly.
Chill for 2 hours or until firm. Lift from pan; remove foil. Cut into pieces.
Makes 32 pieces.

peppermint candy

DIRECTIONS:
1. In saucepan, over low heat, melt chips with EAGLE BRAND® and salt. Remove from heat; stir in extract. Spread evenly into waxed paper-lined 8-or 9-inch square pan. Sprinkle with peppermint candy.
2. Chill 2 hours or until firm. Turn fudge onto cutting board; peel off waxed paper and cut into squares. Store covered in refrigerator
