At the time that a camera ships and they print the instruction manuals, most companies include some sort of guarantee that the camera will work with memory cards up to a certain size.
Two years down the road, you can probably buy cards with insanely larger storage capacities. Those newer cards might also work... or they might not. Canon / Nikon / etc. just want to avoid angry letters and lawsuits if the newer cards don't work.

This is just my educated guess but...
Some older or lower-end digital cameras cannot support a 1GB or higher card. Maybe the camera manufacturers just want you to know that this one can?
