I'm a ' pasty white California girl ' . . .but what I know grits to be is cooked cornmeal. I believe the cornmeal is mixed with some water then boiled and / or made into a paste and fried in a pan like pan cakes would be. I think many times flavor enhancers are added such as cooked in bacon grease or other flavors added in the cornmeal water mixture. How did I do for a white California girl . . . close to the mark ?

Above give you the idea. I was 8 years old when we moved to Augusta, Georgia. My dad took us to a restaurant for breakfast and they had Grits on my plate. This was new to me and they tasted terrible. The waitress seeing I was not eating my Grits asked me what was wrong. I told her I did not like Grits. So, she poured a little sugar on them and stirred in some butter. Then she said; "try them now". I been eating Grits ever since. Ha! Now I am older and like them with just the Butter.

Check out this web site. It has a "what's a grit" icon and recipes too.
Take it from a true southerner, grits are best slow cooked (none of that quick single serving stuff) and served with polish sausages and tomatoes!

Grits are actually ground up corn that is made into a hot breakfast cereal. I usually mix them with eggs. They are basically cooked in scalding hot water.

Kiss my grits!! ha ha thats somethin a country hillbilly like me might say... but seriously they are pretty tasty served usually with breakfast. It is very similiar to "cream of wheat" u boil it and it is a grainy type of mash lookin white stuff that u put lots of butter on. It is made from hominy with comes from corn.

In the old days the Native Americans would soak dried corn in wood ashes (lye) and the corn would swell up about 10 times its size or more. This is called Hominy.
Then they let Hominy dry again and grind it: these are called grits.
Grist were alwasy eaten in the Southern US states and only recently came into vogue with the advent of Cajun cooking.

They are kinda like oatmeal and /or malt o meal. Cooked the same way. Texture is gritty. Mostly eaten by people in the southern U.S.
