Gravy


Ingredients

vegetable stock
vegan worcestershire sauce
balsamic vinegar
cornflour or thickening granules

To make a vegetable gravy more tasty I always make it using water from boiled vegetables if I have any. Carrot water is especially nice as it has a nice sweet flavour. You need to strain off the vegetables and then boil the water down so that it reduces. Then you will have a more concentrated flavour.


If you don't have any vegetable stock made up you can make your own. Finely chop or grate 1 large onion, 1 carrot and a stick of celery. Put into a pan of boiling water (cover vegetables with water then add the same amount of water again. Boil until the vegetables are really soft and the gravy has reduced down considerably. Then strain the veggies. The left over vegetables can be blended and made into soup and the stock is ready to be made into gravy.


You can of course use a stock cube to make the gravy, or to intensify the flavour of yours, but they are very salty and sometimes the flavour can be too intense for a delicate dish.


Put your stock into a saucepan and add a dash of vegetarian Worcestershire sauce, and a dash of balsamic vinegar and some salt if required. Then add slowly some thickening granules or some cornflower until the gravy is of the desired thickness. Make sure you stir it quickly so it can mix well. If you have lumps in it, strain it through a teastrainer before serving.

Pan fried gravy, made from meat juices and milk. I also love pan fried gravy made with bacon drippings and milk.

Not the healthiest food in the world but talk about comfort food, when poured on fluffy mashed potatoes.

I make them both from time to time.
