I'm looking for a good but not too difficult recipe for a Christmas dessert. Any recommendations?

1/2 cup butter
1/2 cup light brown sugar
1 teaspoon vanilla
1 1/2 cups flour
1/2 teaspoon salt
2 tablespoons milk
1/4 cup semisweet chocolate chips, chopped
1/4 cup chopped skinless peanuts
For the filling:
3/4 cups semisweet chocolate chips
2 tablespoons peanut butter
2 tablespoons corn syrup
1 tablespoon water
1 teaspoon vanilla

Preheat oven to 375 degrees F.
In a mixer with a paddle attachment, cream the butter. Add the sugar and continue creaming, then add the vanilla and mix. Mix in the flour and salt. Add the milk and chopped chocolate and mix. Roll into 1 1/2-inch balls and dip the top of the ball in chopped peanuts. Place on a cookie sheet 1 1/2 inches apart and push your thumb in the middle to make a depression. Bake until light golden brown, about 10 to 12 minutes. Let cool while you make the filling.
To make the filling, over hot water melt the chocolate then stir in the remaining ingredients. Cool 5 minutes then fill the centers of the cookies. Allow to slightly set, approximately 10 minutes.

I have a wonderful recipe for dessert it's called "Million Dollar Pie".

1 large cool whip
1 med. can crushed pineapple (slightly drained)
1 c. chopped pecans
1 can Eagle Brand milk
1/3 c. lemon juice
2 8" graham cracker pie crusts

1. Mix milk and lemon juice.

2. Add rest of ingredients.

3. Divide into 2 crusts.

It's really, really good!

Pies were the tradition at my house, apple, pumpkin, and mince. With lots of whipped cream, of course! But my mom made a great apple kuchen, too. It was a Betty Crocker recipe, but I *think* I remember it. Cut a box of plain cake mix in with 1/2 cup shredded coconut and 5 tbsp cold butter, press into 9x13(?) pan. Bake 10 minutes @350 and remove. On top of crust add a can of drained apples (adding a bit of cinnomin sugar if unsweetened) or a jar of of apple pie filling. In a seperate bowl, mix a cup of sour cream with a quarter (?) cup sugar and either one whole egg OR 2 eggs yolks til well blended. Drizzle onto apple filling. Bake another 30 (?) minutes, or til crust looks done and topping is starting to look dry (it will crack a bit). You might want to look it up, its a great dessert, very easy and always gets compliments.

"CHRISTMAS DESSERT"

1 (8 oz.) cream cheese, softened
1/2 c. sugar
2 c. thawed Cool Whip
1 lg. can cherry pie filling
Graham cracker crust
Coconut to garnish

Beat together cream cheese and sugar until creamy. Blend in Cool Whip.
In a glass baking dish (approximately 8x12 inches), pat in graham cracker crust (crushed graham crackers and melted butter) evenly. Pour above mentioned mixture into pan, spreading evenly. Top with cherry pie filling and sprinkle coconut as garnish. Chill at least 3 hours before serving.

My family has always made coconut cake for Christmas. Make a white cake mix, frost with fluffy white frosting, and press coconut into the frosting. It looks all snowy and wintery, and you can decorate it with pretty Christmas candies, or with a silk poinsettia right on top. We serve this with fruit salad, and it is so good.

Traditional: Sugar cookies with icing.. I bake and let everyone frost and decorate thier own on Christmas Eve, kids and adults have fun with this.. hot chocolate and hot toddy's go great with it.

Easy: go to Kraft.com or Pillsbury .com they have a range of difficulties and you can even get substitutions for ingredients if you want to omit some of the fats.

Red Velvet Cake...Ambrosia (Fruit Cocktail with Coconut and Sour Cream) and Banana Pudding with lots of Vanilla Wafers and top it with Fresh Meringue.

I am making this for my boyfriend for Christmas: take the recipe for Rice Krispie treats, and when it is time to cool them, shape them into a snowman instead of into bars. You can decorate it with candy.

Personally, I find the meal itself very filling & the one thing I miss most in all the food that's around is fruit. Why not try some fresh fruit salad with fresh whipped cream or gourmet ice-cream?

Pecan pie is pretty easy, just don't make the crust yourself. Buy the frozen kind. I add stuff to mine, but this is a pretty basic one. Always goes over well at my house. I add extra vanilla extract and cinnamon. You can put raisins in it too.
