light in color or light in density?

Experiment with the recipe....use less milk powder for a lighter coloured loaf. If you prefer a lighter texture then either use more yeast i.e. 2teaspoons to 3cups flour or use more shortening. Check out Alton Brown on the food network he's got a good show on the chemistry of Bread. Really good explains most things and very informative.

if you are referring to the density you must not over work or over knead the dough... if you do the bread will turn out dense and tough. try allowing it to rise at least twice and roll it on a table that has little to no flour.
