Would like to know what process is used to remove membranes of oranges ie:canned mandarin oranges?

Found an article online that says they put them thru a bath in lye solution which dissolves the membrane then wash them thoroughly and add more citric acid (the lye bath neutralizes the natural acid!). Is this true????????

you can segment an orange by taking a small paring knife with a peeled orange and cutting between the membrane and the orange slice on both sides which leaves you with a smaller wedge but no white membrane on each side!

they are usually removed by hand (gloved)

I don't think they have invented a machine to do that, yet.

but who knows, we have walked on the moon
