Apple sauce
Butter or margerine
Crisco or other shortening
Lard or rendered chicken fat
prune puree

True story:
When I lived at home with my mom, we decided to bake a cake from a mix. While preparing it we realized we didn't have any oil or shortening or even any margerine. It was the middle of a bad ice storm so we couldn't go to the store. We did however, have a large bowl in the fridge with a boiled chiken in it. My mom carefully scooped off the congealed fat from the top of the bowl while avoiding the layer of gelatin just underneath it and used that. We both laughed and figured we'd be throwing the cake away. Well, it was the best cake either of us had ever had. Animal fat or lard, it turns out, makes the BEST cake.

I have the best recipe for cake and if people knew what was in it they would be grossed out...lol. It is called mayonnaise cake. The reason for the name is that you don't use oil or eggs. You use an egg sized amount of mayonnaise to substitute. It has to be real mayonnaise not reduced calorie or Miracle Whip because it is the real egg and oil in the mayonnaise that make it a perfect substitute. Your cake will be so moist you might never go back to using oil and eggs again. An egg sized amount is for example if the recipe calls for two eggs just put two dollops of mayonnaise the size of an egg in the bowl. Good Luck!!

What do you have? Crisco? what will you grease the pan with? You can use melted butter or crisco, but mix it with the milk or water so it's not too hot when it comes in contact with the baking powder, or other leavening agent.

I have used an equal amount of melted margarine before with very little variation in taste. Good luck.

Not sure that this will help much but I often heard of people substituting with apple sauce. But not sure of the chances that you will have this either.

Applesauce, really...my girls did this a lot to reduce the fat content and calories.
