I am sick of cooking the same stuff all the time & would appreciate any yummy recipes from anyone!!!

Dinner in Foil

For each serving, take a large square of heavy-duty aluminum foil. Place a boneless chicken breast or boneless pork chop in the center of the foil. Season the meat with one of the following -- barbecue sauce, lemon pepper, dill butter, teryaki, or whatever you're hungry for.

Place any or all of the following around the meat: a peeled and quartered potato, a peeled carrot cut into chunks, a few small broccoli spears or cauliflower florets, and a small onion cut into chunks. Dot the veggies with butter and season lightly with salt and pepper.

Fold the aluminum foil up to form a tightly sealed packet. Bake at 350 degrees until meat is tender and the veggies are cooked -- usually around half an hour.

This is as simple and delicious as a meal gets -- plus clean up is minimal!

Ranch fajitas are a favorite at my house. Here is the recipe from the Hidden Valley Ranch website:

Hidden Valley Skillet Fajitas
Ingredients
1 packet/1 oz.
Hidden Valley® The Original Ranch® Salad Dressing & Seasoning Mix

2 tablespoons
Olive oil

1 tablespoon
Water

1 1/2 pounds
Beef flank steak (cut into strips)

3 cups
Assorted bell pepper and onion strips

4 (10-inch)
Flour tortillas, warmed

Fillings: guacamole, salsa, sour cream (optional)

Preparation
Prep Time: 25 min.
Cook Time: 15 min.

Combine seasoning & salad dressing mix with oil and water. Sauté steak strips in dressing mixture. Add peppers and onions; cook until tender-crisp. Place mixture in tortillas. Add fillings, if desired.

Makes 4 servings.

We serve with shredded cheese, pico de gallo, guacamole, sour cream, and refried beans. (Sometimes we make with chicken, just two chicken breasts into strips and substitute for flank steak.) Enjoy!

Sausage, Escarole, and White Bean Ragout:

The flavorful sausage and bold escarole are filling additions to this French-accented stew. Substitute mustard greens to mimic the bitter flavor of escarole, or use spinach for milder flavor. Serve with a crusty baguette or rolls.

12 ounces sweet turkey Italian sausage
Cooking spray
1 cup prechopped onion
1 cup cubed peeled red potatoes (about 6 ounces)
1/3 cup chardonnay or other dry white wine
1 tablespoon bottled minced garlic
1 (16-ounce) can cannellini beans or other white beans, rinsed and drained
1 (14-ounce) can fat-free, less-sodium chicken broth
4 cups sliced escarole (about 4 ounces)
1 teaspoon chopped fresh rosemary
2 tablespoons grated fresh Parmesan cheese

Remove casings from sausage.

Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add Italian sausage and onion to pan, and cook for 4 minutes or until sausage browns, stirring to crumble. Drain sausage mixture well; return to pan. Stir in potatoes, wine, garlic, beans, and chicken broth; bring to a simmer. Cover and cook 7 minutes. Stir in escarole and rosemary, and cook for 4 minutes or until the escarole wilts, stirring occasionally. Ladle 1 1/4 cups soup into each of 4 shallow bowls, and sprinkle each serving evenly with 1 1/2 teaspoons cheese.

Yield: 4 servings (serving size: 1 1/4 cups soup and 1 1/2 teaspoons cheese)

TACO BURGERS:

put hamburger in a mixing bowl... and add the taco seasoning packet to the hamburger and mix well. shape into hamburger patties... and cook them like regular hamburgers.

Toast your hamburger buns. Top your hamburger with taco shredded cheese, lettuce, (what ever you put on your taco)... sure is great!!!! let me know how that turns out for you.

i love making chinese stir fry! you can make it with chicken, shrimp, or beef then just add the veggies. cook with soy sauce and a spice called chinese five spice....you can get it at any grocery store in the spice aisle or asian cooking aisle. cook up the meat first then add veggies and "stri fry" them together with the soy sauce and spice. you can make white rice to go with it!

Tatter Tot Casterole


Great Side dish for any occasion, better than regular mashed potatos!

Ingredients
Potatos
Cheese (shredded, Cheddar)
Butter (preferably margarine)
Frozen Tatertots
Boiling water
(optional) Chopped chives

Preparation
Boil large pot of water.


Add potatos as you would cook to make mashed potatos.

Mash potatos and whip until there are no chunks. Let cool off almost completely. Add few spoonfuls of margarine to potatos depending on how much mashed potatos were made until there isj ust a faint taste of the margarine. Prepare and cook frozen tatertots as directed on the bag. Once cooked, mix mashed potatos and tatertots in casserole dish leaving large chunks of tatertots. Add a fairly thick layer of shredded cheese on top of the mix and place in oven on 250 until center of casserole is warm and ready to serve.

BLACK BEAN QUESIILDILA

1 yellow sweet pepper, chopped
1 cup onions, finely chopped
2 garlic cloves, minced
1 teaspoon canola oil
2 medium tomatoes, chopped

1 (15 ounce) can black beans, rinsed and drained
1/4 teaspoon pepper
1/8 teaspoon salt

In a large nonstick skillet coated with nonstick cooking spray, saute the yellow pepper, onion and garlic in oil for 2 minutes. Sitr in tomatoes and corn; cook 2 minutes longer. Add the black beans, pepper, and salt. Cook until vegetables are tender; drain.
Spritz 1 side of each tortilla with nonstick cooking spray; place plain side up on baking sheets coated with nonstick cooking spray. Spoon mixture onto half of each tortilla sprinkle with cheese. Fold tortilla over filling.
Bake at 400 degrees for 6 minutes. Carefully turn over; bake 4-7 minutes longer or until cheese is melted.

Chicken Pizza

INGREDIENTS
CRUST:
1 (.25 ounce) package active dry yeast
1 cup warm water (110 degrees to 115 degrees)
2 3/4 cups all-purpose flour
1 tablespoon vegetable oil
1 tablespoon sugar
1/2 teaspoon salt
TOPPING:
1 (10.75 ounce) can condensed cream of mushroom soup, undiluted
1 teaspoon paprika
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
1 medium green pepper, chopped
1 small onion, chopped
1/2 pound fresh mushrooms, sliced
1 cup diced cooked chicken
1 1/2 cups shredded Cheddar cheese
2 1/2 cups shredded mozzarella cheese
DIRECTIONS
In a large mixing bowl, dissolve yeast in water. Add 1-1/2 cups flour, oil, sugar and salt; beat until smooth. Add enough remaining flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. Punch dough down. Divide in half and roll each half into a 13-in. circle. Place each piece on a lightly greased 12- to 13-in. pizza pan. Combine soup, paprika, oregano, garlic powder, salt and pepper; spread over each pizza. Layer with green pepper, onion, mushrooms and chicken. Combine cheeses; sprinkle over pizzas. Bake at 425 degrees F for 20-25 minutes or until crust is browned and cheese is melted.

Chicken Alfredo Pizza
12 inch prebaked pizza crust
1 jar Ragu Al fredo pasta sauce
2 boneless skinless chicken breasts, cooked and shredded
1 can sliced mushrooms (optional)
1 /2 an onion, sliced thinly (optional)
1 /2 a green pepper, sliced thinly (optional)
½ cup each mozzarella and fontina cheeses

Spoon sauce onto pizza crust. Top with chicken, mushrooms, onion, and green pepper. Top with cheeses and bake at 350 for 12 minutes or until cheeses are bubbly .


Baked Mac-sagna
1 lb. Macaroni cooked and drained
2lbs. Hamburger, browned and drained
1 large container large curd cottage cheese
1 large can gr. Pepper and mushroom spaghetti sauce
1 cup each cheddar and mozzarella cheeses

In large bowl, mix macaroni, hamburger, cottage cheese, sauce, and 3/ 4’s of each of the cheeses. Pour into baking dish and top with the remaining cheese. Bake until cheese is golden and bubbly.


Hens in a Blanket
1 (9 ounce) package chicken breast tenders
1 (8 ounce) can refrigerated crescent rolls
Cheddar cheese slices

Preheat oven to 400 degrees F. Unroll crescent rolls; separate into triangles. Top each triangle with a chicken tender and slice of cheese. Roll up, starting at wide end. Bake on a cookie sheet for 10 to 12 minutes, or until golden brown. Variations: Use Swiss or pepper jack cheese, sautéed onions, peppers, etc.


Over-Rice Dish
2 lbs lean ground beef. I use ground sirloin
1 Lg. can tomato sauce or 1 can stewed tomatoes
1 can water
1 TBS prepared mustard
1 TBS Worcestershire
1/2 medium size onion chopped
1 small green, red, or yellow pepper, chopped
salt and pepper to taste

Brown meat in heavy skillet. Add remaining ingredients and pour over meat in skillet. Bring to a boil and then simmer for about 1 to 11/2 hrs. until sauce is thick. Serve with rice or egg noodles. Serves about 6. It is very good so you may want to make more. Leftovers are great.


BAKED BEAN CASSEROLE
1 lb. hamburger
8 strips bacon
10-12 hot dogs
Busch's baked beans (large can)
1 sm. Jar relish
2 squeezes of ketchup
½ bottle barbecue sauce
2 squeezes of mustard
Garlic powder
Seasoned salt
Parsley
Garlic pepper

In bottom of pan put ketchup, mustard, relish,
barbecue sauce and spices. Place beans in pan. Slice hot dogs thinly and quickly pre-cook in frying pan. Cook hamburger, drain both and place in pan with beans. Cook bacon, break and put in pan. Mix all ingredients together (I use my hands). Since all ingredients are cooked, just heat to taste at 350º for 40-60 minutes.


Pizza Noodle Casserole
8 oz noodles, cooked,drained
1 pound ground beef
1 T oil
1 can mushrooms, drained
4 oz. pepperoni, chopped
1 can (15 oz.) pizza sauce
2 c cheddar cheese
1 c mozzarella cheese, shredded

Preheat oven to 375. Brown ground beef in oil. Mix in mushrooms, pepperoni, pizza sauce and cheddar cheese. Put cooked and drained noodles in greased baking pan. Pour sauce mixture over noodles and top with mozzarella cheese. Bake 30 - 45 minutes til hot and bubbly.


"Cordon Bleu" Manicotti
1 pkg (12) string cheese snacks
12 slices each deli sliced ham and chicken breast
12 manicotti shells
1 jar pasta sauce
3/4 cup water
shredded parmesan cheese

Roll ham and chicken slices around each string cheese snack and slide into mannicotti shells. Mix water with pasta sauce. Pour a little sauce into bottom of baking dish. Place Manicotti in baking dish and pour remaining sauce over shells. Bake covered with aluminum foil (or if baking with covered dish, cover with lid) bake at 350 for 50 minutes or until pasta is tender. Top with parmesan and serve.


HOT DOG AND HAMBURGER PIE
1 pound lean ground beef
4 hot dogs , cut into 1/4-inch slices
1 (15 ounce) can baked beans
1/2 cup ketchup
2 tablespoons brown sugar
2 tablespoons prepared yellow mustard
2 ounces Cheddar cheese, cubed
1 (1.25 ounce) package taco seasoning mix
4 slices processed American cheese
1 (9 inch) deep dish pie shell

Preheat oven to 400 degrees F (200 degrees C). Bake empty pie shell for 10 minutes. In a large skillet over medium heat, cook ground beef until browned, stirring occasionally to crumble; drain fat. Stir in hot dogs, beans, ketchup, mustard, taco seasoning, and cheese cubes. Cook for 2 to 3 minutes. Spread beef mixture into baked pie shell. Cut American cheese slices into strips, and make a lattice on top of pie. Bake for 5 to 10 minute, or until cheese is slightly melted.


RIGATONI AND HAM BAKE
3 c. rigatoni
2 c. diced cooked ham
1 c. shredded Cheddar cheese
1 jar 4 cheese alfredo sauce
1/2 cup milk
1/2 c. crushed ritz crackers
butter

Heat oven to 350 degrees. Boil water (2 quart) in a large deep pot with 2 teaspoons salt and 1 tablespoon oil (to prevent boiling over). Add rigatoni noodles, stir to separate. Cook uncovered until water comes to a full rolling boil for 10-11 minutes, stir occasionally. Drain and rinse under hot water. In a large bowl, combine cooked rigatoni, ham and 1 cup cheese. In a medium saucepan, mix milk with alfredo sauce. Combine sauce with rigatoni mixture. Turn into 2 quart casserole. Sprinkle with ritz crackers and dot with butter. Bake at 350 degrees for 25-30 minutes.
