I often cook meals for one and would like to stop throwing away carrots and celery. Is there any way to freeze it for future use in cooking?

Celery:
The answer to your question is no. Like many vegetables, celery is mostly water. It is, in fact, about 95% water. As a result it does not freeze well.

When the celery freezes, the water contained inside the stalk also freezes, damaging the fibers. I knew this intuitively and it was something that I had always been told. I had not, however, actually tried to freeze celery, so I experimented. The results were a spongy pulp when the stalks were thawed.

The best part is that if you keep celery on hand it makes a great snack. It has almost no calories and there's a lot of fiber. A 3 1/2 ounce serving has all of 14 calories and about 1.5 grams of fiber. Snack on the celery and use the leftovers for your soups and such.
Carrots:
Scrub and chop any large carrots into smaller pieces. Blanch three minutes, chill three minutes place in zip freezer bag and remove as much air as possible

Cooked carrots can be frozen after draining off all but a tablespoon of the cooking liquid. Celery is made of salt, water and a little fiber.
Consequently, it doesn't freeze well. When you defrost it, it will be limp.

Yes. Freeze them raw but prepared for cooking, then just grab a handful for steaming or casseroles as you need. Most 'solid' vegetables - mushrooms, leeks, pumkin etc - can be stored for a number of months in this way.

They will last a very long time in the fridge if you wrap them in aluminum foil.
Some grocery stores allow you to open their packages and buy a smaller amount, ask.
I find that freezing changes the texture of the food making it kind of grainy

I do not think you should freeze them but that's just my Apennines but you could freeze it one time and then cook it and if you like how it tastes then keep on doing that.

yeeah but you dont freeze it. if yuo take the leftovers and put them in a container with a top, then put it in the fridge, it will last an extra 4-6 days.

There's got to be, because they sell it in the frozen food section! What's best is probably one of thos vacuum bag gadgets.

buy baby carrots and put what is left over in the frige or buy them frozen and put small amounts of it in little individual plastic baggies use one bag per meal leave the other bags in the freezer

use a foodsaver and put in in the freezer. they can cost from like 60-200 dollars
